Street food style fried rice loaded with crunchy veggies and soft paneer along with extremely delicious Schezwan flavors making it one of the best fried rice of all time.
If you have ever eaten Indo Chinese food on the streets of India, you know how flavor packed food items they make. Just to name some of the classic Indo Chinese goodies, Veg Manchurian, Chili Paneer, Hakka Noodles, Veg Fried Rice etc. I have documented many of the classics on my blog for a long time now. But somehow I missed this incredible fried rice, Schezwan Paneer Fried Rice! Funny enough, I was going through cleaning my fridge the other day and surprisingly found all the ingredients required to make Schezwan Paneer Fried Rice.

Luckily I measured this time and boy oh boy, it turned out BETTER THAN STREET VENDORS. I know that is a bold claim to make but take my words for it and just make it. Follow the recipe to the T and you’ll know where my confidence for this recipe is coming from! This super simple, easy and quick fried rice is fuss free quick meal that comes together in under 20 minutes.

I love using onion, pepper, cabbage, carrots and string beans as fresh veggies along with tiny cubes of paneer and ginger/garlic. You can certainly substitute paneer with tofu to add more protein and lower the fat content. Either way it will blow your mind. The sauce is super simple and requires only 4 items. And those are Ching’s Schezwan Chutney, Ching’s Dark Soy Sauce, Rice Vinegar and tomato ketchup along with salt and pepper. The key to perfect fried rice is a day old cooked rice. It seems to dry out a bit which helps absorb all the flavors from the sauces.

This recipe comes together super quickly. It is a great one to meal prep. I am a sucker for a good rice dish and its a huge win if such rice dishes are easy and quick to make. I love my fried rice loaded with lots of veggies to pack in that much needed fiber and adding either paneer or tofu adds protein. You cannot go wrong with such nutrients dense recipe that is not only delicious but also easy to make.

Schezwan Paneer Fried Rice
Ingredients
- 2 tbsp Avocado Oil any oil of choice
- 1½ tbsp Minced Garlic
- 1 tbsp Grated Ginger
- 3 Whole Dry Red Chilis
- 4 cup Cooked Rice preferably a day old cooked long grain basmati rice
- ⅓ cup Finely Chopped Scallions, white part
- ¾ cup Finely Chopped Onion
- ½ cup Finely Chopped Green Pepper
- ½ cup Finely Chopped Red Pepper
- 1 cup Finely Chopped Carrots
- 1 cup Finely Chopped Cabbage
- 1 cup Finely Chopped Green/String Beans
- 2 cup Tiny Cubes of Paneer can be sub with tofu for higher protein lower fat
- 1 tsp Salt
- ¼ tsp Black Pepper Powder
- ⅓ cup Finely Chopped Scallions, green part
- ⅓ cup Finely Chopped Cilantro
Sauce Mix
- ½ cup Ching's Schezwan Chutney
- ¼ cup Ching's Dark Soy Sauce
- 1 tbsp White Rice Vinegar
- 2 tbsp Tomato Ketchup
Instructions
- Prepare all the veggies mentioned above and keep them a side.
- Mix everything listed under "Sauce Mix" and keep it a side.
- In a wok, heat up 2-3 tbsp of avocado oil. Once hot, add in minced garlic, grated ginger, finely chopped white part of scallions and 3 whole dry red chilis. Saute on medium heat until the raw smell of garlic is gone, do not burn it.
- Add in finely chopped onion, green pepper and red pepper. Cook on high heat for a 40-60 seconds while stirring once of twice.
- Add in finely chopped carrots, cabbage and string/green beans. Cook on high heat for a 40-60 seconds while stirring once of twice.
- Add in small cubes of paneer or tofu. Mix well and cook for a minute on medium heat.
- Add half amount of sauce mix, stir well to coat all the veggies well with the sauce.
- Add in cooked rice and rest of the sauce along with salt and black pepper powder. Mix well to coat everything well with the sauce. Be careful while mixing to avoid the mushiness of the rice.
- Cook on medium heat for a minute, while tossing couple of times during this step.
- Garnish with finely chopped green part of the scallions and cilantro. Serve it hot with choice of beverage!
