Prepare all the veggies mentioned above and keep them a side.
Mix everything listed under "Sauce Mix" and keep it a side.
In a wok, heat up 2-3 tbsp of avocado oil. Once hot, add in minced garlic, grated ginger, finely chopped white part of scallions and 3 whole dry red chilis. Saute on medium heat until the raw smell of garlic is gone, do not burn it.
Add in finely chopped onion, green pepper and red pepper. Cook on high heat for a 40-60 seconds while stirring once of twice.
Add in finely chopped carrots, cabbage and string/green beans. Cook on high heat for a 40-60 seconds while stirring once of twice.
Add in small cubes of paneer or tofu. Mix well and cook for a minute on medium heat.
Add half amount of sauce mix, stir well to coat all the veggies well with the sauce.
Add in cooked rice and rest of the sauce along with salt and black pepper powder. Mix well to coat everything well with the sauce. Be careful while mixing to avoid the mushiness of the rice.
Cook on medium heat for a minute, while tossing couple of times during this step.
Garnish with finely chopped green part of the scallions and cilantro. Serve it hot with choice of beverage!
