An ultimate high protein veggie sandwich with flavor loaded patties packed between bread with green chutney, sweet & spicy sauce, and crunchy veggies along with cheese!
As weather starts to warm up, my cravings for a good loaded veggie sandwiches start to rise. I am a sucker for a good veggie sandwich. Its unfortunate that when you buy a “veggie sandwich” outside, most of the time they lack protein and the worst part is that they skimp out on veggies in VEGGIE SANDWICH. This situation right here makes me very very hangry.
To be honest, it is so easy to make sandwiches at home, especially when you have just a few preps done ahead of time. I love adding kebab/patties to my veggie sandwiches to make it more filling as well as to add that much needed protein. I have been obsessed with this simple 3 key ingredient patties/kebab recipe.

Just 3 key ingredients, block of extra firm tofu, canned beans and Vital Wheat Gluten, this combo is a CHEAT CODE to an ultimate plant protein fillings. You can honestly add any flavors to the mix of these 3 key ingredients and come up with flavorful protein packed plant patties in minutes. These patties are also great for meal prep and freezes so well. I love making a big batch and use it for sandwiches, salad toppers or even like a chaat filler!

If you are following my recipes for sometime, you are probably aware of my High Protein Tofu Kebab, which was the inspiration behind these Tofu/Bean patties. This specific sandwich is simply made with these protein packed patties, cilantro mint green chutney, sweet & spicy Maggi sauce, and crunchy veggies along with cheese! Having the chutney and these patties prep ahead of time helps a ton with weeknight meals like this that comes together in no time.

Now this is the type of veggie sandwich I expect to get when go out to delis and pay good amount for. High Protein Veggie Sandwich
Ingredients
Patties Ingredients
- 16 oz Trader Joes High Protein super firm tofu any extra firm tofu will work
- 15.5 oz Canned Red Kidney Beans drained and rinsed
- ¼ cup Vital Wheat Gluten (https://amzn.to/3JC0x7D) can be sub with oat/chickpea flour, sattu
- ½ cup Finely Chopped Red Onion
- 1 Finely Chopped Jalapeno
- â…“ cup Finely Chopped Cilantro
- â…“ cup Finely Chopped Scallions
- 2 tsp Black Salt or regular salt
- 3 tsp Chaat Masala
- ¼ tsp Black Pepper Powder
- ½ tsp Garam Masala
- 1 tsp Kashmiri Red Chili Powder or regular red chili powder
- ½ tsp Turmeric Powder
- ½ tsp Roasted Cumin Powder
- 1 tbsp Lemon Juice
Other Ingredients
- 6 Trader Joes Sandwich Starter Bread or any bread of choice
- 6 slices Pepper jack Cheese
- 1 cup Cilantro Mint Chutney (linked below)
Cilantro Mint Chutney
- ½ cup Light Mayo
- ¾ cup Maggi Hot & Sweet Tomato Chilli Sauce

- 1 Whole Red Onion, thinly sliced
- 3 Tomatoes, thinly sliced
- 3 cup Thinly Shredded Lettuce
- 1 tbsp Chaat Masala
Instructions
Making of Tofu/Beans Patties
- Trader joes high protein tofu comes already pressed, but I still like it press it a bit more to assure complete removal of as much water possible. You can skip this step or press it more, then pat dry the tofu and shred it.
- Drain and rinse the canned kidney beans, pat dry it to remove extra water. Then mash it with potato masher.
- Add mashed beans and rest of the ingredients listed under "Patties Ingredients" to shredded tofu. Mix all very well. The mixture should have consistency to form patties. Make 12 even patties.
- In a big wide non stick pan, spray some oil at the bottom. Place patties in the pan leaving some space in between them. You can cook patties in 2 rounds if they all don't fit into one pan.
- Cook all patties on both side with some spray cooking oil until each side is nicely brown and crispy. Once done keep it aside.
- These patties freeze well and also stays well in refrigerator for upto a week. Simply warm them up either on stove top in a pan or in an oven before using it.
Prepare cilantro mint green chutney following linked recipe.
- Mix ½ cup green chutney with ½ cup light mayo. Coat shredded lettuce with this chutney mayo mix. Keep it aside or in the refrigerator if not using it right away.
Assmebling of the Sandwiches
- Toast both side of the TJ sandwich starter bread, one side as it is and the otehr side topped with sliced pepper jack cheese to ensure the cheese melts durign toasting of bread.
- Once toasted, spread green chutney + mayo first & Maggi sauce on both pieces of bread, one directly on bread while the other on top of melted cheese.
- Place 2 patties on one side of the bread, on top of chutney/sauce later.
- Place sliced red onion and tomato on top of patties, then sprinkle some chaat masala.
- Place chutney mayo coated shredded lettuce on top of onion/tomato layer. Then top it with otehr side of the bread, chutney/sauce side facing the lettuce.
- Cut the sandwich in half and serve it with jalapeno chips and some ice cold beverage of choice!
