Veg kebabs wrapped in a tortilla along with flavored crunchy coleslaw, spicy green and garlicky red chutney!

Yet another street food from India! Frankie very famous vegetarian street food. It is similar to kathi roll or I would say veggie wraps! So many good veggies are in this dish along with spicy green and red chutney. This dish is a perfect combination of great flavors and perfect textured food!
When you look at the Veg Frankie recipe you might think it is there is all to do at once. And I agree, that is why I put this dish in prep ahead category. You make everything I mentioned in the recipe below ahead of time. When you are ready to eat you just warm the kebabs up in a toaster oven and assemble it together! Now does that sound a quick meal?!?! It does to me!

Veg Frankie/Kathi Roll
Ingredients
Frankie Masala Ingredients
- 1 tbsp Black Salt
- 1 tbsp Roasted Cumin Powder
- 1 tbsp Red Chili Powder
- 1 tbsp Dry Mango Powder
- 1 tsp Turmeric Powder
- 1 tsp Ground Black Pepper
- 1 tsp Dry Ginger
- 1 tsp Salt
Veg Kebab Ingredients
- 2 cup Meshed Boiled Potatoes
- ½ cup Chopped Onions
- ½ cup Chopped Bell Peppers any color bell pepper is fine
- ½ cup Shredded Carrots
- ½ cup Chopped Cabbage
- 1 cup Assorted Shredded Cheese Indian Amul cheese tastes the best in this dish, though any assorted shredded cheese should work
- ¼ cup Frankie Masala
Red Garlic Chutney Ingredients
- 6 cloves Garlic
- 1 tbsp Kashmiri Red Chili Powder
- 1 tbsp Salt
- 3 tbsp Water
- ¼ cup Extra Virgin Olive Oil

Flavored Crunchy Coleslaw Ingredients
- 1 cup Shredded Cabbage
- ½ cup Shredded Carrots
- ½ cup Thinly Sliced Bell Peppers any color bell peppers are fine
- ½ cup Thinly Sliced Onions
- ¼ cup Mayo Ranch or avocado ranch works great too!
- 1 tbsp Frankie Masala
Assembly
- 6 Tortillas
- 1 cup Assorted Shredded Cheese Indian Amul cheese tastes the best in this dish, though any assorted shredded cheese should work
- 3 tbsp Butter
Instructions
Prepare Frankie Masala
- Mix all frankie masala ingredients together and keep it aside. This stores well in an air tight container for 3-4 months at room temperature or up to 6 months in the refrigerator. It can be used on wraps and sandwiches also!
Prepare Green Chutney
- Prepare green chutney as per instructions on this link and keep it in the fridge or aside if using it right-away, https://myvegetarianroots.com/green-chutney-dipping-sauce/
Prepare Red Garlic Chutney
- Blend all red garlic chutney ingredients in a blender or a food processor till smooth, keep it in the fridge or aside if using it right-away.
Prepare Flavored Crunchy Coleslaw
- Mix all flavored crunchy coleslaw ingredients together and keep it in the fridge or aside if using it right-away.

Prepare Veg Kebabs
- Place all kebab ingredients in a big bowl.

- Mix all veg kabab ingredients together to make a somewhat firm kebab mixture, firm enough to shape kababs that won't break while cooking!

- Make medium size kababs and cook it on the pan with some oil on both sides until golden brown.

- It is best to make these kebabs right after you make the mixture. If you keep the mixture for too long, it starts to loose water from the veggies and will not form into kebab shapes. If it starts becoming loose, adding some bread crumbs will help!

- Once all kebabs are cooked on a pan, place them on a baking sheet and bake it on 350°F for 30-40 minutes.

- Once they are done baking, they are ready to use! These kebabs can be made ahead of time. You can store pre-made kebabs in the fridge for up to 3 days. When you are ready to make frankie, just toast them in the toaster oven for few minutes to warm it up!

Assemble Frankie
- Cook each tortillas on a pan with some butter on both sides.

- Spread green and red chutneys on one side of the warm tortillas.

- Place decent amount of flavored crunchy coleslaw in the middle of the tortillas.
- Place one veg kebab on each tortillas topping the flavored crunchy coleslaw.

- Place some shredded cheese on veg kebabs and roll the tortillas tight to make a roll like burrito with one open end.
- Serve it with extra chutney and side of chips!
