Creamy dreamy vegetarian spicy queso protein pasta packed with tremendous flavors of basic ingredients and plant based chipotle sausage.
My love language is spicy saucy comforting food. Be it any Indian curry or saucy pasta. This Spicy Queso Protein Pasta is right up my alley for those exact reasons. And its an add on bonus when such delicious food is packed with that much needed protein without compromising the flavors. I truly enjoy many OG dishes like queso shells but knowing that it is loaded with tons of fats and much nutrients. Just with few swaps, this amazing dish can be made nutrients dense.

This Spicy Queso Protein Pasta recipe uses protein pasta instead of regular pasta while creamy sauce is made with mix of high protein milk, cottage cheese and silken tofu with touch of cheese. I like adding plant based spicy sausage to this to add that extra protein. Not only it adds protein but also add flavors and makes it filling. Spicy Queso Protein Pasta
Ingredients
- 8 oz Protein pasta, preferably Goodles Curveballs
- 2 links Field Roast Plant based Spicy Chipotle Sausages minced using food processor
- 3 cloves Garlic
- ½ Jalapeno
- ½ Spicy Red Hot Pepper
- 2 tbsp Salted Butter
- 2 tbsp Avocado oil, any choice of oil
- ¼ cup Finely Chopped Yellow Onion
- ¼ cup Finely Chopped Green Peppers
- ¼ cup Finely Chopped Red Peppers
- ¼ cup Finely Chopped Cilantro
- ¼ cup Finely Chopped Scallions, green part
- ½ cup Fairlife 2% Milk
- ½ cup Good Culture 2% Cottage Cheese
- 4 oz Soft Silken Tofu ¼ of the 16 oz container
- ½ cup Pasta Water
- 1 tsp Salt
- ½ tsp Black Pepper Powder
- ¾ tsp Red Chili Powder can be sub with cayenne pepper, paprika powder
- ½ tsp Cumin Powder
- 1 tbsp Taco Seasoning
- ½ cup Spicy Shredded Cheese like pepper jack
Instructions
- Mince garlic, jalapeno & spicy red hot pepper in a food processor. Keep it aside.
- Mince 2 links of plant based Field Roast spicy chipotle sausages. Keep it aside.
- Blend fairlife milk, cottage cheese and silken tofu. Keep it aside.
- Boil pasta as per box instructions, keep it al dente. Save some pasta water to add it to the sauce later.
- Heat up mix of butter and avocado oil. Once butter is melted, add in minced garlic and pepper mix. Saute on medium heat until raw smell of garlic is gone. Do not burn it.
- Add in finely chopped onion, green pepper and red pepper with ½ tsp of salt. Mix well and cook until onions are translucent.
- Add in minced sausages. Mix well and cook for 1-2 minutes on medium heat.
- Then add in fairlife milk, cottage cheese and tofu mixture along with ½ cup of pasta water. Mix well.
- Add in ½ tsp of salt, ½ tsp of black pepper powder, ¾ tsp of red chili powder and 1 tbsp of taco seasoning. Mix well and bring it to simmer.
- Once simmering, fold in shredded cheese. Mix well until cheese is melted.
- Then add in boiled pasta, mix well. It will seem a bit liquidy, which is okay. Cover it and let it cook for a minute on low heat. This will ensure thickening of the sauce.
- Once done, turn the heat off and add in chopped cilantro and green part of scallions. Cover it again while keeping the heat off for another 1-2 minutes.
- Uncover, Mix well and enjoy with choice of beverage!
