Super saucy Teriyaki Tofu Fried Rice loaded with veggies and amazing flavors, a quick easy wholesome one pot meal.

I know many people do grocery shopping based on the recipe they plan on making which shows great planning. However I personally like to show produce that look and feel super fresh. And I cook around things I have available in my fridge through out the week. Which works out great most of the times. However sometimes I do end up with random veggies in my fridge. That I have to use up before they start to go bad. This recipe is an outcome of one of those clean out my fridge situation. And I can gladly say that it turned out one of my favorite things to make when I am don’t have much time on my hands.

Teriyaki Tofu Fried Rice

I always keep random asian sauces in my pantry/fridge. Especially soy sauce, hoisin sauce and sriracha sauce. The combination of those 3 is so versatile and lifts up any dish instantly. I ended up making better than takeout Teriyaki Tofu Fried Rice using the combination of these 3 sauces and some seasonings along with whole bunch of veggies. I can confidently say that this fried rice has been one of my favorite lately. Because it is super easy and quick to make as well as packed with powder ingredients. This is truly a well balanced one pot meal that makes a great weeknight dinner.

Teriyaki Tofu Fried Rice

Key to good fried rice is a day old cooked rice. It absorbs sauces so well due to some dryness in old rice. You can simply use precooked rice available at grocery stores or even use rice and quinoa mix. I am a sucker for a big bowl of hot spicy fried rice, which is why you will find many different variations of them on my blog. I do urge that you give this or any of my fried rice recipes as all of them are amazing and comes together super quickly.

This Teriyaki Tofu Fried Rice is very forgiving as well. You can use any vegetable you like, I personally like the ones I have used in this recipe as it add different texture dynamic. And adding peanut it completely option but I suggest you try it as it adds that much needed touch crunch. Teriyaki Tofu Fried Rice

Super saucy Teriyaki Tofu Fried Rice loaded with veggies and amazing flavors, a quick easy wholesome one pot meal.

Ingredients

  • 4 tbsp Avocado Oil
  • 16 oz Extra Firm Tofu pressed and cubed
  • 3 cup Cooked Jasmine Rice preferably day old rice
  • ½ large Sweet Yellow Onion, sliced
  • 5 oz Shiitake Mushroom, sliced
  • 3 cup Broccoli Florets, small pieces
  • 10 oz Sugar Snap Peas, (tips removed, broken in half)
  • ½ cup Roasted Salted Peanuts
  • ½ tsp Salt

Sauce Mix

  • ¼ cup Hoisin Sauce
  • ¼ cup Dark Soy Sauce
  • ¼ cup Sriracha Sauce
  • 1 tbsp Rice Vinegar
  • ½ tsp Black Pepper Powder
  • ½ tsp Ginger Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder

Instructions

  • Mix everything listed under "Sauce mix" and keep it aside.
  • Take tofu out of the box and wrap it in couple of paper towels for anywhere from 30-40 minutes. Place a Weight on the wrapped tofu. Your weight should be heavy enough to press down evenly across the top of the tofu, but not so heavy so as to cause the tofu block to crumble.
  • Once the extra water if gone from the tofu, cut it in cube and saute them in 2 tbsp of oil on medium heat until they get golden brown and somewhat crispy, tossing and turning them every few minutes. Be careful while tossing and turning so it does not crumble.
  • Once tofu cubes are golden brown on each side, add ¼ cup of sauce mix, toss well to coat all tofu cubes. Take the tofu cubes out in a bowl and keep it aside.
  • In the same pan, add 2 more tbsp of oil then add in sliced onions and shiitake mushroom with ¼ tsp of oil. Cook them on high heat until they start to sweat.
  • Once mushrooms are ½ way cooked, add in small pieces Broccoli Florets and Sugar Snap Peas. Cook on high heat for 1-2 minutes, or until they start to char. Then add in ¼ cup of sauce mix, mix well.
  • Add in cooked rice along with rest of the sauce mix then mix well to assure everything is well coated with sauce mix, without mushing up the rice.
  • Then add in cooked/flavored tofu and roasted salted peanut. Mix well and enjoy!
