Mince garlic, jalapeno & spicy red hot pepper in a food processor. Keep it aside.
Mince 2 links of plant based Field Roast spicy chipotle sausages. Keep it aside.
Blend fairlife milk, cottage cheese and silken tofu. Keep it aside.
Boil pasta as per box instructions, keep it al dente. Save some pasta water to add it to the sauce later.
Heat up mix of butter and avocado oil. Once butter is melted, add in minced garlic and pepper mix. Saute on medium heat until raw smell of garlic is gone. Do not burn it.
Add in finely chopped onion, green pepper and red pepper with ½ tsp of salt. Mix well and cook until onions are translucent.
Add in minced sausages. Mix well and cook for 1-2 minutes on medium heat.
Then add in fairlife milk, cottage cheese and tofu mixture along with ½ cup of pasta water. Mix well.
Add in ½ tsp of salt, ½ tsp of black pepper powder, ¾ tsp of red chili powder and 1 tbsp of taco seasoning. Mix well and bring it to simmer.
Once simmering, fold in shredded cheese. Mix well until cheese is melted.
Then add in boiled pasta, mix well. It will seem a bit liquidy, which is okay. Cover it and let it cook for a minute on low heat. This will ensure thickening of the sauce.
Once done, turn the heat off and add in chopped cilantro and green part of scallions. Cover it again while keeping the heat off for another 1-2 minutes.
Uncover, Mix well and enjoy with choice of beverage!
