Plain Khichdi, Ultimate comfort food simply made with mix of rice and lentil along with very salt and turmeric.
Khichdi is one of the most comforting food on this planet. I know it is a bold statement but I stand by it. Once you try this golden goddess of comfort, you will feel the same about it as I do. It is one of those foods that comes together in almost no effort with least amount of ingredients. Simply enjoy it with dollop of ghee and you are in comfort heaven.
Simple mix of lentils and rice with just very basic spices like salt, turmeric, ginger, garlic and lots of ghee. Be it sick day, travel day, busy work day, or lazy day, this is surely hit the spot. I obviously love it by itself. And I also enjoy it with Gujarati Kadhi, Garlicky Spinach Curry, Tuvar Ringan nu Shak or just tons of spicy mango pickle, Gujju style!

I am sure you will find tons of recipes of this simple food online and prob even know how to make it from your mom or grand mother. But I still feel the need to share my version of this simple foods. My side of the family does not add ginger or fenugreek seeds to khichdi but I learned to add those 2 from my grate grand mother in law back when she was 98 years old and lived with us for sometime. She passed when she was 101 years old while left this priceless lesson behind!

Plain Khichdi
Equipment
- Instant Pot
Ingredients
- ½ cup Tuvar Dal split pigeon peas
- ½ cup Jasmin Rice or Basmati Rice
- 2 cup Water
- ¼ tsp Asafetida (Hing Powder)
- ¼ tsp Turmeric Powder
- 1 tsp Salt
- 2 large Garlic Cloves, sliced
- â…› tsp Fenugreek Seeds
- ¼ inch Grated Ginger
- 3 tbsp Ghee
Instructions
- Place rice and dal in Instant pot. Wash it very well and let it soak for 15-20 minutes.
- Discard all the water from IP, then add in 2 cups of water and rest of the ingredients listed above.
- Put IP on saute mode, bring the water to simmer. Then close the lid, seal the valve. Set IP on high pressure for 5 minutes.
- Once cook time is over, let pressure release naturally for 10 minutes and release rest of the pressure manually.
- Once IP valve is release, open the lid and enjoy pipping hot Khichdi with lots of ghee and my world famous Gujarati Kadhi!
