Sometimes all you want is simple comfort food to make your tummy and soul happy!! This curry definitely falls into that category!! This easy to make healthy curry is loaded with fiber and just right amount of flavors. Eat it with simple phulka rotli or plain khichdi with side of Gujarati Kadhi. It is so light on your belly and brings that complete comfort with no doubt.

It is extremely easy to make with very basic ingredients. This one pot curry comes together under 15 minutes. I also love using the leftovers to make some quick quesadilla using corn tortilla to keep it gluten-free. If you need something quick, light and comforting, this is it!!

Garlicky Spinach Curry

Low carb, high fiber, hearty Garlicky Spinach Curry made with very basic ingredients like fresh spinach, onions, tomatoes and spices.

Ingredients

  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 pinch Assafetida
  • 1 Sliced Jalapeno
  • 3 cloves Large Garlic – sliced
  • ½ tsp Salt
  • ½ tsp Turmeric Powder
  • 2 tsp Cumin Coriander Powder
  • ½ Sliced Onions
  • 1 Sliced Tomato
  • 3 cup Chopped Baby Spinach regular spinach works too
  • cup Water

Instructions

  • Heat 2 tbsp oil in a pan.
  • Saute cumin seeds till they change color to deeper brown and starts to form aroma.
  • Add a pinch of asafetida.
  • Add sliced jalapeno and garlic. Saute on medium heat till sliced garlic changes color to golden brown.
  • Add sliced onions and pinch of salt. Saute till onions are translucent.
  • Add sliced tomatoes and saute till they become mushy and starts to release water.
  • Add chopped spinach and saute till it is wilted. Add salt, cumin coriander powder and turmeric powder. Mix well.
  • Add ⅓ cup of water, mix well and cover. Cook it till the water evaporates and the saute starts to thicken.
  • Turn the heat off and serve it hot with either simple khichdi or gluten-free rotis to make it a completely plant-based, gluten-free and dairy-free hearty meal!
