Overnight Mango Chia Oats that tastes just like Indian dessert, simply made with hint of saffron & cardamom!

Overnight oats during warmer months have been so popular these days. Well, popular or not, I have been making it for few years now to make my busy morning a bit easy. Especially during warmer weather, you do not really feel like having pipin hot breakfast or even be around the stove. That is when these absolutely delicious and easy to make breakfast comes in handy!

One of my go to combination of OVERNIGHT CHIA OATS is made with dates and nut butter with hint of cinnamon. And my current obsession is this new recipe that tastes just like mango flavored Indian dessert! Now think about flavor and texture loaded heavy dessert but make it healthy and nutritious for breakfast. Yes, that is right. This simple, easy, quick chia oats will blow your mind when you take your first bite. It will give you all the delicious dessert vibes while it is still on hearty side!

This plant-based, gluten-free, dairy-free goodie is extremely simple and quick to make. All you need to do is mix all the ingredients in a mason jar. And refrigerate it over night or for 4-8 hours. Overnight Mango Chia Oats

Overnight Mango Chia Oats that tastes just like Indian dessert, simply made with hint of saffron & cardamom!

Ingredients

  • cup Oat Milk any preferred Dairy Free Milk, almond/cashew/soy/oat milk, or simply use regular milk
  • ¼ cup Mango Pulp I like to use canned mango pulp for the ease, fresh pulp would work great too! Frozen mango cubes also work great.
  • 2 tsp Honey OR Maple Syrup
  • 2 tsp Cashew Butter I love one from Trader Joes
  • tsp Cardamom Powder
  • 8 strands Saffron
  • ½ cup Rolled Oats preferably gluten free rolled oats from Trader Joes
  • 2 tbsp Chia Seeds
  • 2 tbsp Slivered Cashews & Pistachios
  • ¼ cup Fresh Mango Cubes

Instructions

  • Simply mix all the above ingredients in a mason jar. Use fork to whisk it very well to avoid chia seeds to lump up. Refrigerate it overnight or at least 4-8 hours.
  • Before serving, Garnish it with more mango cubes and some more slivered nuts. Drizzle of mango pulp & milk (optional)! Add more milk to it if you like runny consistency.
