A modified version of an Indian street food called Aloo Tikki. Aloo Tikki is a vegetarian North Indian fast food dish. Tikki means patties and aloo mean potatoes. The dish consists of a shallow fried potato patties on a flat tawa with decent amount of oil. It is generally accompanied with spicy green, sweet tamarind and creamy yogurt sauce. It is now served in food stalls and restaurants across India. Although it was originated as a cheap street food in North India. Well, I shall say all over the world nowadays!

This fusion aloo tikki sliders are a good mix of Indian street food flavors with western slider idea! Spicy shallow fried potato patties, loaded with spices, cilantro, curry leaves, crunchy lentils. Serve them on slider buns with spicy green, sweet tamarind and red garlic chutneys. Top it with onions and pepper jack cheese (optional). Then grill to perfection, which is a perfect crowd pleaser! Skip the cheese and use oil instead of butter to make it vegan/dairy free!

These are perfect for summer BBQ’s. You can assemble it ahead of time and just grill them when you are ready to serve your crowd! These potato patties are so perfect for making bun less burgers too. Just use lettuce as base instead of bread, top it with this patties, chutneys, minty yogurt sauce, cheese. And have a low carb meal for your healthy self! These aloo tikkis are just so good by itself as well, with spicy/sweet chutneys and yogurt as an appetizer too! Other option is to pour some hot chana masala on top of this with same chutneys, yogurt and toppings to make aloo tikki chaat. I mean the use of this goodie is just endless!

Aloo Tikki Sliders

Ingredients

Aloo Tikki

  • 5 Boiled Russet Potatoes
  • ½ cup Chopped Cilantro
  • 8 Curry Leaves finely chopped or cut in ribbons
  • 2 tbsp Chopped Thai Green Chilis or Serrano Peppers
  • 1 tbsp Grated Ginger
  • tbsp Salt or as per taste
  • 4 tbsp Peanut Oil or any oil
  • 2 tbsp Soaked Urad Dal
  • 1 tsp Garam Masala
  • 1 tsp Red Chili Powder

Additional Ingredients for Assembly

  • 1 Sliced Red Onions
  • 3 tbsp Spread Butter Amul Butter, or oil if making it vegan
  • ½ cup Shredded Pepper Jack Cheese
  • ¼ cup Spicy Green Chutney
  • ¼ cup Sweet Tamarind Chutney
  • 12 Small Slider Buns Brioche slider buns are preferred
  • 1 tbsp Chaat Masala

Spicy Red Peanut/Garlic Chutney (use achar masala instead if you do not wish to make garlic chutney from scratch)

  • ½ cup Raw Peanuts
  • ½ cup Garlic Cloves
  • ¼ cup Coconut Powder
  • ¼ cup White Sesame Seeds
  • tbsp Salt
  • 1 tbsp Red Chili Powder

Garnishing

  • 12 pieces Thick Pepper Jack Cheese slices
  • 12 slices Jalapenos
  • 3 tbsp Spicy Green Chutney
  • 3 tbsp Sweet Tamarind Chutney

Instructions

Make Potato Tikkis

  • Soak 2 tbsp of urad daal in warm water for 15 minutes.
  • Mash all the boiled potatoes. Add chopped cilantro, Thai green chili, grated ginger, salt, red chili powder and garam masala. Combine everything together. Do not mix too much or it will start loosing its firmness. Taste it and add more salt/spices if needed.
  • Drain water out of the soaked ural daal and spread it on top of a paper towel to get rid of the extra water.

  • Heat 2 tbsp oil in a pan and slowly add drained ural daal to the pan. Keep frying it in the oil on medium heat till it changes color to golden brown and starts to form aroma. Keep stirring frequently to prevent it from burning. Add chopped curry leaves.

  • Add crispy urad daal along with the oil in the potato mix. Carefully mix it well. Form round tikkis that is as big as the slider bun size.

  • Add couple tbsp of oil in a flat wide pan. Cook tikkis in oiled pan for 6-8 minutes on medium on medium/high heat on both sides till they get golden brown.

  • Keep it aside until you are ready to assemble the sliders.

Red peanut garlic chutney

  • Dry roast garlic cloves in a pan on medium heat until it changes color to golden brown and starts to loose the raw garlic smell. Cool it down once it is roasted.
  • Roast peanuts in the same pan on medium heat. Once the peanuts are almost roasted add sesame seeds and roast for 2-3 more minutes. Take it off the stove once it's roasted.
  • Add coconut powder to the same hot pan and keep mixing it for couple of minutes. The leftover heat is good enough for roasting coconut.
  • Once garlic, peanut, coconut powder and sesame seed mix is cooled down completely, add salt and red chilli powder. Grind it to a coarse mixture. You have spicy red peanut garlic chutney ready!

Assembly

  • Split the whole slider bun sheet by making a cut in the middle so that you have the top layer and the bottom layer of the slider buns sheet separated. You can certainly make one slider at a time, I like to just assemble them all together as a sheet and grill them all at once.
  • Spread butter on cut side of both sheets. Skip this step if making it dairy free, or use dairy free butter.
  • Spread spicy green chutney on top of the butter layer on both sheets halves.
  • Sprinkle thinly sliced red onions on the bottom sheet, on top of green chutney layer.
  • Sprinkle chaat masala on top of sliced onions.
  • Place prepared tikkis on top of onions layer. Place it the way it sits properly on the single bun bottom. So that when you cut the sliders, each slider has its own full tikki!
  • Sprinkle shredded pepper jack cheese on all the tikkis. Skip this step if making it dairy free, or use dairy free cheese.
  • Sprinkle generous amount of spicy garlic chutney/achar masala on all the tikkis.
  • Spread generous amount of sweet tamarind chutney on the other half of the bun sheet, on top of green chutney layer.
  • Place the top bun sheet on top of the bottom bun sheet which is loaded with onions, tikkis cheese etc.
  • Place light pressure on the sliders so that everything sticks well together, do not press too much so that the tikkis might break.
  • Spread butter/oil on top of the buns and place the whole thing in a panini maker. Cook in panini maker on 450° F for 6-10 minutes, depending on how crispy and dark you want your sliders. Making sure the cheese is melted inside.
  • If using outside grill, press the sliders well and place the whole thing in the grill. Cook on medium heat until it starts getting some charred spots on it and the cheese is melted.
  • Once done, poke toothpick in each slider to secure all the layers.
  • Slide in sliced jalapeno and cubed pepper jack cheese in each toothpick. Skip the cheese for dairy free option.
  • Place a tiny dollop of green chutney on each slider. Drizzle some sweet red chutney on all the sliders.
  • Sprinkle some chaat masala on top of all the sliders. Serve it hot, either let your guests cut their own sliders or you cut them before serving them!
