Suvari/Khadkhadiya – Mildly sweet puri/crackers simply made with flour, sugar, milk, sesame seeds and ghee to pair with your spicy and savory Diwali snacks!!

This is one of those Diwali snacks that brings back all my warm childhood memories! My Kamu baa (grand maa) used to make the BEST Suvari/Khadkhadiya. And she used to do it so effortlessly. All the kids in the house used to love these crispy puris. I am honestly not a sweet food kinda girl. However these Suvari/Khadkhadiya are mildly sweet and pairs so well with spicy and savory snacks.

These are very simple to make with minimal pantry ingredients. It only requires flour, sugar, milk, sesame seeds, ghee and oil to fry them. Making Diwali snack was a huge part of festive season in our household. My mom, baa, sister, me, we all used to work together for few days to make mathiya, chorafadi, chakri, gathiya, chevdo and these delicious Suvari/Khadkhadiya. Making those snacks during Diwali brings back so many memories! I do miss home during this festive time of the year!

Suvari/Khadkhadiya

Mildly sweet puri/crackers simply made with flour, sugar, milk, sesame seeds and ghee to pair with your spicy and savory Diwali snacks!!

Ingredients

  • 1 cup All Purpose Flour
  • ¼ cup Wheat Flour
  • 2 tbsp White Sesame Seeds
  • 3 tbsp Sugar
  • 1 cup Whole Milk
  • 4 tbsp Melted Ghee
  • Oil to deep fry I prefer peanut oil

Instructions

  • Warm up 1 cup of whole milk along with sugar and white sesame seeds. Keep it aside.
  • Mix all purpose flour and wheat flour in a wide bowl.
  • Add melted ghee to the flour and mix well.
  • Start adding little sweetened milk (warm enough to handle with your bare hands) to form bhakhri like dough. Keep adding little sweetened milk at a time and kneading until you have not too soft and not too hard dough formed. If you run out of milk, use warm water to kneed the dough.
  • Once the dough is formed, cover it and keep it aside for 15-20 minutes.
  • For rolling, you can either roll small puris or roll big rotis and cut them in small circles using a cookie cutter to make them cute tiny little crackers.
  • Poke them couple of times with a fork. Lay the rolled out suvari on flat surface to let it dry. Do not stack them.
  • Once all the suvaris are rolled out, let them dry out for 40-45 minutes.
  • Deep fry them slowly on medium heat on both sides until they are golden brown. It might seem like it does not crisp up right after deep frying, but let them cool down and it should get crispy
  • Serve them with your spicy and savory Diwali snacks!! Store them in an air tight container upto 2-3 weeks.
