I am sure you all experience days when you just want to have something extremely simple yet satisfying. This fried rice is made with nothing but leftover rice, some veggies and spices. This is a next level Indian street style Indo-Chinese fried rice that will blow your mind!! The key ingredient of this dish is black and white pepper!!

It is one of those recipes that is super simple to make. If you have leftover rice, frozen veggies, black/white pepper and soy sauce, you are golden!! This one pot goodie comes together in less than 20 minutes. It plant-based dish is naturally gluten-free and dairy-free. I mean if all my healthy meals are this simple yet extremely delicious, why would I want my food any other way?!?! It is great for meal prep. Have some cooked rice and chopped veggies handy. Then it is just a matter of putting those together within minutes!!

I love eating this by itself!! However it pairs really really well with some amazing Indo-Chinese dishes. For example, Gobi Manchurian, Veg Manchurian, Chilli Mushroom, Chilli paneer, Chilli tofu etc!! This has been my most favorite fried rice till date!! It will be yours too once you try it!! Peppery Fried Rice

Extremely simple and delicious peppery fried rice, asian flavored rice loaded with veggies, deliciousness and pure comfort!!

Ingredients

  • 3 tbsp Oil
  • 1 tbsp Minced Garlic
  • 1 tsp Grated Ginger
  • 1 Serrano Pepper – finely chopped
  • ¼ cup White part of Scallions – chopped
  • 1 cup Finely Chopped Yellow Onions
  • 1 cup Finely Grated Cabbage
  • ½ cup Finely Chopped Carrots
  • 1 cup Frozen Peas
  • ½ cup Chopped String Beans
  • 3 cup Steamed Rice leftover is preferred
  • 4 tbsp Dark Soy Sauce
  • ¼ tsp Salt
  • 1 tsp Black Pepper Powder
  • ½ tsp White Pepper Powder
  • ¼ cup Chopped Cilantro
  • ¼ cup Green part of Scallions – chopped

Instructions

  • Boil frozen peas and string beans. Do not over boil it, the string beans should have some crunch to it after boiling. Once boiled, strain it and keep it aside.
  • Heat oil in shallow wide pan.
  • Add chopped serrano, minced garlic, grated ginger and chopped white part of the scallions to the oil.
  • Saute on medium heat for a minute or two, or until the raw smell of garlic disappears, making sure it does not burn.
  • Add chopped onions, grated cabbage and carrots.
  • Saute on high heat for couple of minutes.
  • Add boiled peas and string beans. Also add black pepper, white pepper, dark soy sauce and salt. Mix well.
  • Turn the heat to medium heat. Add steamed rice. Mix well gently, making sure the rice does not break. Leftover/a day old cooked rice that is al dente and not mushy is preferred for this recipe.
  • Once mixed well, cover it and cook it for a minute or two.
  • Turn the heat off, add chopped cilantro and scallions. Serve it hot!! It just taste amazing by itself!!
