I have been obsessed with buffalo flavored food lately. Few of my favorite dishes are FLAMIN HOT BUFFALO CAULIFLOWER BITES and FLAMIN HOT BUFFALO CAULIFLOWER PIZZA. Now my new obsession is this Buffalo Jackfruit Taco! It not only has flavors, but they also have amazing texture. Perfectly cooked jackfruits with buffalo flavors, creamy spicy SUPER GREEN GUACAMOLE, and amazingly crunchy and flavorful PICKLED COLESLAW.

Buffalo Jackfruit Tacos

I grew up eating jackfruit, an exotic fruit grown in tropical regions of the world. It is native to South India. I always enjoyed eating the yellow sweet avrils of jackfruits. There are many different uses of their seeds too including some amazing dishes! However I was not aware of their rags are also edible. This recipe uses rags of a jackfruit. It is said that jackfruit rags give that pulled pork like texture. I am not sure how true that is, since I have never had pulled pork.

I am personally not a big fan of fake meat like consistency. However this is not like that. Jackfruit rags are cooked to amazing texture and soaks in any flavors you add. I love using buffalo flavors for that! Buffalo Jackfruits are great for tacos, since it is so filling and delicious. I love adding good fats like avocado and crunchy pickled coleslaw not only for crunchy texture, but also for lot of fiber!

This dish is perfect one for meal prepping. I make a batch of buffalo jackfruit filling and PICKLED COLESLAW on weekends. It is super quick and easy to assemble on busy week nights. Buffalo Jackfruit Tacos

Ingredients

Spiced up Jackfruit

  • 2 tbsp Oil
  • ½ medium Sliced Onions
  • ½ medium Sliced Red Pepper
  • 1 small Finely Chopped Serrano
  • 20 oz Jackfruit in Brine (canned) drained, rinsed and shredded using fork
  • 1 tsp Minced Garlic
  • 2 tbsp Buffalo Sauce
  • 1 tsp Hot Sauce
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Taco Seasoning

Assembly & Toppings (as per your choice)

  • 1 cup SUPER GREEN GUACAMOLE
  • 1 cup PICKLED COLESLAW
  • cup Cojita Cheese
  • ¼ cup Chopped Cilantro
  • ¼ cup Chopped Scallions
  • 1 cup Medium Spiced Salsa
  • 6-8 Mini Taco Tortillas flour or corn tortilla, based on your preference

Jalapeño Ranch (Use store bought or blend below ingredients to desired consistency)

  • ½ cup Cilantro
  • 1 Jalapeño use ½ for less heat
  • ½ cup Fat Free Plain Greek Yogurt
  • ¼ cup Sour Cream
  • 1 clove Garlic
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¼ tsp Cumin Powder
  • 1 tsp Lemon Juice
  • ½ tsp Salt

Instructions

Spiced up Jackfruit

  • Drain, rinse and shred jackfruit using fork once you take them out of the can. Keep it aside.
  • Heat oil, saute chopped serrano and minced garlic for couple of minutes until the raw smell of garlic disappears.
  • Saute sliced onions and peppers until onions are translucent.
  • Add prepared jackfruit. Cook it on medium heat until most of the moisture evaporates and it starts to brown. It should take anywhere from 7-10 minutes.
  • Add buffalo sauce, hot sauce, garlic powder, onion powder and taco seasoning. Mix well.
  • Cook for a minute or two. Turn the heat off. Keep it aside.

SUPER GREEN GUACAMOLE

PICKLED COLESLAW

Assemble

  • Warm tortilla on the flame to get that char look and flavor.
  • Spread generous amount of SUPER GREEN GUACAMOLE.
  • Top it with generous amount of spiced up jackfruit mix.
  • Top it with PICKLED COLESLAW.
  • Sprinkle cojita cheese, cilantro and scallions.
  • Sprinkle dash of hot sauce, salsa and Jalapeño ranch. Serve them immediately!!
