Here is an option 4 for Diwali menu. Most of the recipes are linked below, and couple of things you can simply find on my Instagram @myvegetarianroots. And them being Lachcha Onions as well as Crunchy Veggie Raita!

Appetizers

baked dahi bhalla

Healthy version of classic Dahi balla, Steamed lentil balls aka bhalla drenched into creamy greek yogurt sauce, topped with sweet and spicy chutney and crunchy goodies like sev, boondi & pomegranate.

Smashed Potatoes Chaat

Crispy baby smashed potatoes topped with dry chana masala, minty spicy green chutney, sweet tangy tamarind chutney and fresh crunchy toppings.

Main Course

paneer tikka masala

A classic North Indian curry made with spongy soft paneer, red onion and green peppers marinated with best spice mix and cooked with spicy tangy onion tomato onion based gravy.

Red kidney beans cooked in onions & tomatoes based gravy along with fresh spices, whole & ground dry spices is one of the most comforting Indian dish!

stuffed eggplant palita

Eggplants palita stuffed with potatoes, cilantro, bunch of spices and shallow fried to make the best and unique plant based baingan dish!

mattar paneer pulao

Super simple spiced up peas and paneer (Indian style cottage cheese) rice dish made with super simple ingredients in an Instant Pot.

Dessert

mango mousse cake

Creamiest eggless no bake Mango Mousse Cake with super rich flavors like mango, saffron, cardamom, pistachio!

sabudana rabdi

Rich creamy tapioca pearl pudding made with homemade evaporated milk infused with saffron and cardamom, loaded with nuts to add just a right amount of crunch to the creaminess!

I also like to serve some munchies for fun. Mainly dry Indian snacks you find at Indian grocery stores. Mahiya, chorafali, chakri, papdi gathiya, kaju katli, peda, spicy nuts all are some good options. For condiments I love serving sweet, spicy, galicky chutneys as well as Indian style Pickled jalapeรฑos.
