It is almost time for incredible sunny days that makes you want to enjoy light and refreshing food!! Summer is all about refreshing salads and beverages made with fresh seasonal fruits! This refreshing minty salad is just a perfect combination of tangy, sweet, spicy, savory!! Adding fresh fruits to your salad is a great way to add natural sweetness to any salads. And this is a perfect example of that.

This delicious salad is so easy to make. Scoop out tiny balls from ripe juicy cantaloupe, slice crunchy english cucumber. Toss in lemon zest, fresh chopped mint, pink salt, roasted cumin powder, black pepper, chili lime seasoning from Trader Joes. Squeeze in fresh lemon juice and add dash of honey or maple syrup. Mix it all together along with optional feta cheese and enjoy it cold and fresh!! Serve it in cantaloupe shell and garnish with extra chopped mint and a lemon wedge with side of boozy masala soda! I guarantee you’ll feel like you are in the bright summery haven!!

Refreshing summer salad with fresh cantaloupe, cucumber, mint, lemon zest and juice, subtle spices, feta cheese and just a dash of honey!

Ingredients

  • ½ Cantaloupe cubed or balls
  • ½ English Cucumber sliced
  • 1 tbsp Chopped Mint
  • ¼ tsp Pink Salt
  • ¼ tsp Roasted Cumin Powder
  • ¼ tsp Black Pepper
  • ¼ tsp Chili Lime Seasoning
  • 1 tbsp Lemon Juice
  • 1 tsp Honey sub with maple syrup for vegan
  • ¼ cup Feta Cheese optional if making it vegan
  • ½ tsp Lemon Zest

Instructions

  • Make dressing by mixing all the ingredients listed above except cantaloupe and cucumber in a big wide bowl.
  • Toss in cantaloupe balls/cubes and sliced cucumber in the bowl with the prepared dressing.
  • Chill it in the refrigerator for 30-40 minutes.
  • Serve it cold in the cantaloupe shell with wedge of lime to make it look pretty!!
