Ladoo made out of leftover bhakhri, jaggery, ghee, sesame seeds and hint of cardamom to make super quick kid friendly healthy dessert!

Bhakhri is one of those food items you would always find in my kitchen. It is super simple to make and extremely comforting. Eat them with any type of shaak/curry, Gujarati Dal, Gujarati Kadhi or even simply with chai as your breakfast or snack! This means there are days we end up with leftover bhakhri as we pretty much make them everyday, sometime couple of times a day. Growing up I saw my baa, grand ma, make quick ladoos out of these leftover bhakhri. As a kid, it was a treat for me and my siblings, well it still is!! And at the same time my baa made a good use out of leftover bhakhri!! It was like win win for all of us!

My kids love bhakhri as much as I do! They call it a baabi. I make these same ladoos as my baa used to make and my kids absolutely love them. They eat it for snack and take it in their lunch boxes as it is nut free! I sometime give it to them as their breakfast with some milk, the milk and bhakhri ladoo combo is just divine! Bhakhri is made with tiny amount of salt. This ladoo is made with jaggery, ghee, sesame seeds and hint of cardamom. It is just enough sweet with that tiny amount of salt from bhakhri. The taste is nothing but complete haven!!

Bhakhri Ladoo

Ladoo made out of leftover bhakhri, jaggery, ghee and sesame seeds to make super quick kid friendly healthy dessert!

Ingredients

  • 6-8 Bhakhri 3 cup ground bhakhri
  • 3 tbsp Ghee
  • 1 cup Jaggery ¾ for less sweetness
  • 1 tbsp Sesame Seeds
  • 1 pinch Cardamom Powder

Instructions

  • Process stale bhakhri in a food processor to make fine mixture.
  • Heat 1 tbsp of ghee in a flat wide pan and roast processed bhakhri mix on medium heat until it deepens in color and starts to form nutty smell.
  • Take it off the heat and let it cool down for few minutes.
  • While roasted ground bhahri mixture cools down, heat 2 tbsp of ghee in a clean flat wide pan.
  • Add jaggery and keep cooking while stirring constantly until it becomes light and fluffy.
  • Add 1 tbsp of white sesame seeds and pinch of cardamom powder to the ghee mix. Mix well and turn the heat off.
  • Immediately add roasted ground bhakhri mixture to the jaggery mix. Mix well and let it cool down some so it is good to handle for forming ladoos. You can certainly just eat it like this crumbly sweet mixture like churma, you do not have to form ladoos!! It will make you life a bit easier!! You can also flatten it in a thali or tray and cut them in small squares once cooled down.
  • Once the laddo mix it cool enough to touch, start forming ladoos. Do not cool the mix down too much, or you won't be able to make the laddos.
  • Serve them to your kids with glass of milk!
