And being a vegetarian it is just as difficult to add in those much needed nutrients to their diet. What if I tell you that you can achieve both of those difficult tasks in just one go without any struggle?!?! In fact, once you use this trick with your kiddos, they will ask you do the same even more. Let me present you all with a fun colorful way of feeding your kids those much needed nutrients! These rainbow puri has fresh veggies like beetroots and spinach, protein rich tofu, healthy fats like avocado. And nutrients dense seeds like flaxseeds, hempseeds, sesame seeds, carom seeds. These puris have perfect balance of carbs, fiber, protein and fats. And the best part about this one recipe is that it is a combination of few different recipes! If you just want to make red puris or parathas, simply use red dough. And same goes with green and yellow dough. You do not have to use these doughs only for puris. You can use them to make BHAKHRI which uses much less oil.

This is by far one of the funnest ways to get those veggies and nutrients in with no fuss from your kiddos. Not only kiddos, adults will enjoy them just as much. These could be great as festive add on to your festive meals. Simply pair it with ONION POTATO CURRY, MANGO MATHO or RAJBHOG SHRIKHAND. My kids love the combination of these puris with FRUIT CUSTARD and SPICY GARLICKY SPROUTED BEANS, of course less spicy beans for the kiddos! These would make a great one for Holi, festival of colors for obvious reasons!!

Rainbow Puri

Rainbow Puri – puffed up deep fried multi color bread that is loaded vibrant veggies and nutritious seeds, perfect kid friendly goodie!

Ingredients

Red Puri Dough

  • cup Whole Wheat Flour
  • 1 small Boiled Beetroot
  • 4 oz Firm Tofu
  • 2 tbsp Flax meal /Flax Seed Powder
  • ¾ tsp Salt
  • 2 tbsp Water more or less to make beet + tofu thick paste
  • 3 tbsp Oil + 1 tsp

Green Puri Dough

  • cup Whole Wheat Flour
  • 1 handful Fresh Baby Spinach
  • ½ Avocado
  • 2 tbsp Hemp hearts /Hempseeds
  • 3 tbsp Water more or less to make spinach + avocado thick paste
  • ¾ tsp Salt
  • ¼ tsp Cumin Seeds
  • 3 tbsp Oil + 1 tsp

Yellow Puri Dough

  • cup Whole Wheat Flour
  • 2 tsp White Sesame Seeds
  • 2 tsp Carom Seeds
  • ½ tsp Turmeric Powder
  • ½ tsp Red Chili Powder
  • ¾ tsp Salt
  • 1 tsp Cumin Coriander Powder
  • 3 tbsp Oil
  • ¾ cup Water more or less based on firmness of the dough

Other

  • Oil to deep fry

Instructions

Make Red Puri Dough

  • Blend boiled beetroot and tofu with 2-3 tbsp of water to make smooth thick paste. Do not use too much water, else the paste will get runny.
  • In a big mixing bowl, mix wheat flour, salt, oil and flax meal (flaxseed powder). Mix well so that oil is evenly distributed throughout the flour.
  • Now use the beet and tofu paste to make firm dough. Firm enough to roll it without using any dry flour. Dry enough so that it does not stick to your hands, should be like firm playdough consistency. Use more water to kneed the dough if needed.
  • Use 1 tsp of oil to kneed the dough for few more minutes, this will help smooth out the dough. Once done, cover it and let it sit for 10-15 minutes.

Make Green Puri Dough

  • Blend baby spinach and avocado with 3-4 tbsp of water to make smooth thick paste. Do not use too much water, else the paste will get runny.
  • In a big mixing bowl, mix wheat flour, salt, cumin powder, oil and hemp hearts (hemp seeds). Mix well so that oil is evenly distributed throughout the flour.
  • Now use the spinach and avocado paste to make firm dough. Firm enough to roll it without using any dry flour. Dry enough so that it does not stick to your hands, should be like firm playdough consistency. Use more water to kneed the dough if needed.
  • Use 1 tsp of oil to kneed the dough for few more minutes, this will help smooth out the dough. Once done, cover it and let it sit for 10-15 minutes.

Make Yellow Puri Dough

  • In a big mixing bowl, mix everything BUT water listed under "Yellow Puri Dough" ingredients. Mix well so that oil is evenly distributed throughout the flour.
  • Add little water at a time to make a firm dough. Firm enough to roll it without using any dry flour. Dry enough so that it does not stick to your hands, should be like firm playdough consistency.
  • Use 1 tsp of oil to kneed the dough for few more minutes, this will help smooth out the dough. Once done, cover it and let it sit for 10-15 minutes.

Make Rainbow Puris (All the steps are shown in the video above)

  • Uncover each color dough and kneed each one for couple of minutes to smooth it out even more. Split each colored dough into big 5-6 dough balls.

  • Now work with one dough of each color at a time, and cover the rest dough balls so that they do not dry out.
  • You should have 1 big red, 1 big green and 1 big yellow dough balls. Roll each one out in a big round shape, should not be too thin or thick.
  • Now stack each rolled out circles on top of each other, I like red at the bottom, yellow in the middle and green on top.

  • Once the big rolled out circles are stacked, roll/fold them all together in a tight rolling pin. Then use your hands to smooth the folded rolling pin out by rolling the pin on a flat surface.
  • Then cut them in small pieces like pinwheels. Take each pinwheel and roll it between your palms to smooth and flatten it out. Now you should have multiple tiny flattened pinwheels. Cover them with a cloth or using a plate so they do not get dry.

  • Repeat the process of making big circles of each colored dough, stack them on each other, roll them in a rolling pin, then cut them in pinwheels, flatten them between palms and cover it until ready to make puris.

  • Take each flattened pinwheel, start rolling puri as big as tennis ball (3.5 to 4 inch diameter), not too thin or not too thick.

  • If you are rolling all the puris first then frying them all at once, make sure to cover the rolled out puri with a towel so that they do not dry out. You can also roll few puris at a time and fry few at a time.
  • Once ready to fry the puris, heat up oil in a big wide frying pan. Once oil is hot, place rolled puri in hot oil very carefully. Do not over crowd the oil, fry either one puri at a time or just few to cover the surface of the oil.
  • This process is quick, as soon as you place puri in the hot oil, keep pouring/splashing puri with hot oil using your frying spoon. This will help puri to puff up within seconds.
  • As soon as the puri poofs up, flip it and fry the other side only for few seconds. Do not over fry the puris, else it will burn.
  • If puri does not puff up due to seeds in your puri (it is likely to happen), flip the puri as soon as the bottom side starts to change color. Flip it and fry the other side only for few seconds. Do not over fry the puris, else it will burn.
  • Again You might not have all puris puffed up due to sesame seeds and carom seeds. Which is completely okay!
  • Serve them with some masala chai or something cold and sweet like mango ras, milk, shrikhand etc!
