Roasted Garlic Broccoli

Broccoli roasted with sliced garlic, extra virgin olive oil, himalayan salt and fresh coarse ground black pepper. It is so crunchy and delicious that you would want to eat more and more! It is vegan and gluten-free!

Roasted Garlic Broccoli!

This is very easy and quick side dish. I like to prepare it in the morning and take it to work. I just roast it at my work since they have a nice kitchen there! I eat it for lunch just by itself at least once or twice a week! It is THAT good!

My kids love broccoli, specially it is roasted with garlic. They want it as a side with their pizza or any kid of pasta! I love it when they want to eat veggies! This is also a good side dish for a big crowd. Prepare 2 big trays of this ahead of time and just roast it right before your guests arrive! It goes very well with Italian food! You can serve it a an appetizer as well!

Roasted Garlic Broccoli

Broccoli with garlic, extra virgin olive oil, salt and pepper roasted in over to the perfection!

Ingredients

  • 3 cup Raw Broccoli Florets
  • 3 tbsp Extra Virgin Olive Oil
  • ¼ cup Sliced Garlic
  • 1 tsp Kosher or Himalayan Salt just regular salt works too!
  • 1 tsp Fresh Coarse Ground Black Pepper powdered black pepper works too!

Garnishing

  • 1 tbsp Hemp Hearts more or less based on preference
  • Pecorino Romano freshly grated
  • Squeeze of Lemon

Instructions

  • Clean and dry broccoli florets. I like to buy precut and pre-washed broccoli so it makes this recipe very quick. Dry broccoli is the key to this recipe as it we want to keep the broccoli crunchy after its roasted.
  • Remove all the leaves from the broccoli. Cut and pul away the all of the florets.
  • Cut the bigger florets into smaller pieces. Try to keep all the florets uniformly sized to make sure they cook evenly. Then cut the core in half lengthwise, then into 5 or 6 smaller pieces.
  • Place the cut broccoli onto a baking tray. Drizzle all the extra virgin olive oil on the broccoli. Add sliced garlic, salt and pepper. Mix it very well with your hands making sure all broccoli pieces got coated with the oil.
  • Pre heat the oven on 450°F. Place the tray into the over once its preheated. Bake it for 8 minutes and its ready!
  • Garnish it with freshly grated pecorino romano, hemp hearts and squeeze of lemon!
