Rose Falooda

Rose flavored cold dessert beverage loaded with vermicelli, sweet basil (sabza/takmaria) seeds, milk, ice cream, nuts and rose syrup. It is our family favorite dessert. Sometimes we just have this as dinner if we have very heavy lunch. Which is just an excuse to have some this goodie I guess. It is gluten-free and can easily be made dairy-free by using any dairy-free milk and ice-cream!

I wooed my husband (then just a guy from America)  over a glass of Falooda!! Well, I am not saying it, there was a buzz about it. According to some resources, When my husband decided to marry me it was because I impressed him with a glass of Falooda LOL! This dish pays a big role in my “arranged marriage”! I will hold myself back on telling my “arrange marriage” for some other time!

Rose flavored cold dessert beverage loaded with vermicelli, sweet basil (sabza/takmaria) seeds, milk, ice cream, nuts and rose syrup

Ingredients

  • 4 tbsp Basil seeds (Sabja seeds or Falooda seeds)
  • 1 cup Boiled Vermicelli Special falooda sed is preferred
  • 4 cup Milk
  • 2 tbsp Sugar
  • 8 tsp Rose Syrup
  • 8 scoops Cashew Raisin Ice Cream plain vanilla ice cream would work too!
  • 1 cup Chopped nuts and raisins

Instructions

Prepare Millk

  • Bring milk to boil. Add sugar to boiling milk and simmer it for 5-6 minutes. Let it cool down and store it in the fridge for 2-4 hours to make it cold. Once the seeds are socked, they will be 4-5 times more in quantity.

Prepare basil seeds

  • Sock Basil seeds (Sabja seeds or Falooda seeds) in water for 20-30 minutes.

  • Drain the water out once socked. Keep them aside or in the fridge.

Prepare Vermicelli

  • Cut Vermicelli or falooda save in 1-2 inches length if they are big long strings.
  • Boil them in water for 5-6 minutes.
  • Once boiled, drain the hot water out and rinse them with cold water to stop the cooking process. Keep it aside or in the fridge.

Assembly

  • Place 4 serving glasses or mason jars, place 1 tbsp of boiled vermicelli and one tbsp of socked basil seeds at the bottom.
  • Add 1 tsp of rose syrup.
  • Add ½ cup of prepared sweet milk.
  • Add one scoop of ice cream.
  • Now do the second layer of the same topping, 1 tbsp of vermicelli, 1 tbsp of basil seeds, 1 tsp of rose syrup, ½ cups of sweet milk and one scoop of ice cream. You can serve falooda with just one layer of everything, I like to do 2 layers!
  • Top falooda with chopped nuts and raising.
  • Serve it cold immediately!
