Sev Tomato Shaak
Sev Tomato Shaak – simple tomato based curry with basic spices and lots of crunchy chickpea flour noodles (sev).
This tomato based curry is a popular Gujarati dish with fresh tomatoes and other basic ingredients. It is super quick and easy to make. The best part about this curry is the combination of flavors and the texture. It is spicy, savory, sweet, tangy all at once with soft and crunchy texture combo. The crunch comes from the Sev, deep fried chickpea flour noodles. And the softness comes from fresh tomatoes. It is truly a flavor bomb with perfect texture!! Simply serve it with plain Bhakhri to make a perfect plant-based meal!!
One thing that takes the flavors of this shaak/curry to next level is freshly ground ginger, garlic, serrano, cumin seeds and red chili powder with some oil. Sautéing this spice mix with onions adds tons of flavors. This dish is also perfect for meal plan. Make a batch on weekend and simply enjoy on busy weeknights. But honestly, I like to make it fresh on the day of because it literally take less than 15 minutes to make!!

Sev Tomato Shaak
Ingredients
Ginger Garlic Paste
- 1 tbsp Oil
- ½ inch Ginger Root
- 2 clove Garlic
- ½ Serrano Pepper
- ¼ tsp Red Chili Powder
- ¼ tsp Cumin Seeds
Other
- 2 tbsp Oil
- 1 tsp Hing/Asafetida
- ¾ cup Finely Chopped Onions
- 3 Large Tomatoes, chopped
- 1 tsp Kashmiri Red Chili Powder
- ½ tsp Turmeric Powder
- 1 tsp Salt
- 1½ tsp Cumin Coriander Powder
- ¼ tsp Garam Masala
- 2 tsp Jaggery
- ½ cup Water
- ¼ cup Chopped Cilantro
- ¾ cup Thick Sev
Instructions
- Make a grainy paste of everything listed under "Ginger Garlic Paste". I like to use mortar and pestle to make this paste, but you can certainly use grinder. Keep it aside once done.
- Heat 2 tbsp of oil and add cumin seeds. Once they start to fragrant and deepen in color, add asafetida.
- Add in finely chopped onions. Saute for couple of minutes.
- Add Ginger Garlic Paste, mix well and saute till onions are translucent.
- Add in other spices (kashmiri red chili powder, cumin coriander powder, salt, turmeric powder & garam masala). Mix well. Cook for a min or two.
- Add in chopped tomatoes along with ½ cup of water. Mix well and cover it. Keep cooking on medium heat till half of the moisture is evaporated and tomatoes are soften.
- Add in jaggery, mix well and cook for another 2-3 minutes.
- Add in cilantro, mix well. Mix in sev right before serving. Enjoy it with simple bhakhri!
