Chili Cheese Sliders
Classic Indian street style chilli cheese stuffing packed between buttery buns, cheese, chutney and spread then baked to perfection.
I love me a loaded veggie grilled cheese, especially with tomato soup during colder months. However I certainly do not enjoy making them one at a time for the whole family. Does it mean I restrict myself from enjoying such deliciousness?!?! Absolutely not, I love turning any cheesy warm sandwiches into sliders when I have to feed a crowd. This sliders are an outcome of one of those times when I did not feel like making sandwiches one at a time for the entire family.
Chili cheese toast is a very known Indian snack that is made with simple fresh ingredients, basic spices, cheese and chutney. The core of chili cheese toast/sandwich/sliders/quesadilla is without a doubt Cilantro Mint Chutney. And next important thing is the chili cheese filling. This sliders are super duper easy to make and comes together quickly. You simply mix spices with fresh ingredients like onions, peppers, green chilis, cheese, paneer and boiled potatoes. Then assemble it together and grill it to perfection.
I personally like using Indian style Amul cheese and Amul butter for chili cheese sliders. But you can simply sub them with white cheddar and salted butter. Hawaiian savory butter rolls are the perfect choice to make these sliders. They are soft, buttery and delicious. However you can simply use choice of buns. These would be perfect for anything and everything, be it simple cozy winter meal with side of tomato soup or be it fancy holiday feast. These Chili Cheese Sliders are to please your loved ones!

Chili Cheese Sliders
Ingredients
Chili Cheese Stuffing
- 1 cup Shredded Paneer I used Spicy Habanero Paneer from Such Foods
- ¾ cup Shredded Amul Cheese can be sub with white cheddar
- 1 cup Shredded Boiled Potato one medium russet potato, can be sub with shredded soy free plain big mountain tofu
- ¾ cup Finely Chopped Red Onion
- 1 cup Finely Chopped Green Pepper
- ¼ cup Finely Chopped White part of Scallions
- ⅓ cup Finely Chopped Green part of Scallions
- ½ cup Finely Chopped Cilantro
- 2-3 Finely Chopped Thai Green Chili
- 2 tsp Chaat Masala
- 1 tsp Black Salt
- 1 tsp Cumin Powder
- ¼ tsp Garam Masala
- ¼ tsp Black Pepper Powder
- 1 tsp Kashmiri Red Chili Powder
Other/Spreads/Chutneys
- 20 Hawaiian Savory Butter Rolls
- ⅓ cup Amul Butter can be sub with any salted butter
- 14-16 Sliced Pepper Jack Cheese
Instructions
Make Stuffing
- Toss everything together listed under "Chili Cheese Stuffing". Keep it aside.
Assemble Sliders
- Cut Hawaiian Savory Butter Rolls the way that the top and bottom layers separate. Try not to split each bun apart, it is easier to assemble sliders if the whole bottom layer is in one piece so that you can simply layer everything.
- Spread both sides of the bottom of Hawaiian Savory Butter Rolls. Place the bottom layer on a parchment paper and then place it in a baking tray. This will prevent sticking of sliders in a baking tray.
- On top of butter layer, spread generous amount of Cilantro Mint Chutney.
- Then lay out few sliced pepper jack cheese to cover the whole layer.
- Top it with generous amount of "Chili Cheese Stuffing".
- Top it another layer of sliced pepper jack cheese to cover the whole stuffing layer.
- Butter both side of the top layer of Hawaiian Savory Butter Rolls. Then on the inside of the top Hawaiian Savory Butter Rolls, spread Thecha Red Chilli-Garlic Chutney/Lasaniyu Marchu as well as cilantro mint chutney.
- Then place the chutney side on top of sliced pepper jack cheese layer. Make sure there is butter on top of the Hawaiian Savory Butter Rolls.
- Cover the baking tray with aluminum foil, bake it on 375℉ for 18-20 minutes. Serve it with side of cilantro mint chutney and maggi ketchup!
