Spicy Thai Noodles loaded with flavors and texture, made with brown rice noodles, broccoli, tofu, leeks, peanut, fresh herbs and amazing Thai sauces.

Brown rice flat noodles cooked with lots and lots of broccoli and leek. This dish is loaded with Thai flavors including fresh ginger, garlic and all amazing Thai sauce. The combination of spicy, sweet, tangy flavors all compliment each other so well. Fresh cilantro, scallions and salty crunchy peanuts add amazing texture to this dish.

The key to this noodles is the amazing sauce, That is spicy, tangy, savory deliciousness. It is super easy to put together too. There are honestly three parts to this recipe. Make the sauce. Cook the tofu. And cook the noodles and broccoli. Then it is literally matter of putting everything together!

The combination of noodles, tofu and vegetables make this dish very well balanced. This gluten-free, dairy-free, plant-based goodie makes a perfect meal for cold days. These noodles would be great for your meal plans. Make it on weekend and enjoy on busy weekdays.

Spicy Thai Noodles

Ingredients

  • 8 oz Brown Rice Pad Thai Noodles
  • 1 lb Broccoli Florets
  • 2 stalk Leek, thinly sliced discard the green part at very end. Make sure you clean it well since there might be muddy mess at the bottom/inside of them
  • 16 oz Firm Tofu
  • 3 tbsp Peanut Oil
  • 1 tbsp Minced Garlic
  • 1 tbsp Grated Ginger

Sauce Mix

  • 4 tsp Maesri Chili Paste With Basil Leaves (Pad Kapao)
  • 3 tsp PK FRIED CHILI PASTE
  • 3 tbsp Dark Soy Sauce
  • 3 tbsp Hoisin Sauce
  • 1 tbsp Sriracha Sauce
  • 1 tbsp Tamarind Concentrate
  • 3 tsp Brown Sugar
  • 1 tsp Salt

Garnishing/Toppings

  • ¾ cup Coarsely Ground Peanuts salted roasted peanuts
  • ½ cup Finely Chopped Cilantro
  • 1 cup Finely Chopped Scallions
  • 1 tbsp Fresh Lemon Juice more or less based on your preference
  • ¼ tsp Salt
  • tsp Black Pepper Powder

Instructions

  • Take tofu out of the box and wrap it in couple of paper towels for anywhere from 30-40 minutes. Place a Weight on the wrapped tofu. Your weight should be heavy enough to press down evenly across the top of the tofu, but not so heavy so as to cause the tofu block to crumble.

Make the Sauce

  • Mix everything listed under "Sauce Mix". Keep it aside.

Prepare Noodles & Broccoli

  • Boil noodles as instructed on the packaging.
  • When 1-2 minutes left of boiling noodles, add cut/washed/cleaned broccoli florets.
  • Drained boiled noodles and broccoli florets using a strainer. Keep it aside. Keep tossing every few minutes while doing other steps, so that it does not overcook from the heat.

Saute the tofu

  • Once the extra water if gone from the tofu, cut them in cube and saute them in 2 tbsp of oil on medium heat until they get golden brown and somewhat crispy, tossing and turning them every few minutes. Be careful while tossing and turning so it does not crumble.
  • Once tofu cubes are golden brown on each side, add 2 tbsp of prepared sauce. Mix well and keep it aside.

Assemble everything

  • Heat 1 tbsp of peanut oil (I prefer using the the same pan you cooked tofu in since it should have some spicy oil left from cooking/flavoring tofu). Saute ginger and garlic until raw smell of garlic is gone.
  • Add thinly sliced leek and white part of the scallions.
  • Saute until the leek is cooked half way through. Add 1 tbsp of sauce mix. Mix well.
  • Add boiled noodles and broccoli.
  • Pour in all the saute that was prepared earlier.
  • Mix very well until all the noodles are coated well with the sauce.
  • Add prepared tofu. Mix carefully.
  • Add lemon juice and mix well. Add all the garnishing and mix well.
  • Serve it warm!
