Mexican Street Style Frichos

Mexican Street Style Frichos loaded with beans, onions, peppers, cheese, spicy queso, scallions to make a perfect at home happy hour with some ice cold beer!

This is is an outcome of few random stuff sitting in my pantry and fridge that needed to be used up. I had some beans, cheese, frozen fries and veggies that I needed to use up. It was Friday and wanted something bar like food to make a quick at home happy hour! Guess what happened?!?! Frichos happened LOL. Yeah I am calling it Frichos because its almost like nachos but with french fries instead of chips.

I baked frozen fries and loaded them with a mix of beans, peppers, onions, jalapeños, cilantro, scallions and cheese. Drizzled some homemade spicy queso and enchilada sauce. Garnish it with more cilantro, scallions, fresh jalapeño, cubed avocados or super green guacamole and flavored cojita cheese (optional).

Loaded Mexican Street Fries – Frichos

French fries loaded with beans, onions, peppers, cheese, spicy queso, scallions to make a perfect at home happy hour with some ice cold beer!
Servings 5

Ingredients

  • 2 lb Frozen Crinkle Cut French Fried Potatoes

Toppings

  • 1 cup Chopped Sweet Onions
  • 1 cup Chopped Green Peppers
  • 1 cup Canned Black Beans drained and rinsed
  • 1 cup Frozen Corn
  • 1 tbsp Chopped Jalapenos
  • 3 tsp Taco Seasoning
  • 1 tsp Salt
  • ½ cup Chopped Cilantro
  • ½ cup Chopped Scallions
  • 1 cup Shredded Mexican Cheese Blend
  • 1 tbsp Fresh Lemon Juice

Spicy Queso (Use store bought if not making your own!)

  • 6 oz Velveeta Original Cheese
  • 2 tbsp Cream Cheese
  • ½ cup Whole Milk
  • 1 tbsp Chopped Jalapeños

Flavored Cotija/Feta Cheese (OPTIONAL)

  • ½ cup Crumbled Cotija Cheese
  • 1 tsp Taco Seasoning

Garnishing

  • 1 cup Cubed Avocado
  • ¼ cup Chopped Cilantro
  • ¼ cup Chopped Scallions
  • ½ cup Enchilada Sauce
  • 4 Lemon Wedges

Instructions

Bake frozen fries

  • Bake frozen fries according to the package instrustions. I would crank up the oven temperature 415°F more for last 5 minutes to make it crispy and golden brown. While fries are baking, let's make queso and the toppings.

Make the toppings

  • Mix all ingredients listed under toppings in a bowl and keep it aside until the firs are baking.

Make Queso

  • Warm 6 oz of cubed velveeta cheese, 2 tbsp of cream cheese and 1 tbsp of jalapenos in a pot while stirring/whisking it.
  • Once melted, add ½ cup of whole milk to the cheese mix and keep stirring/whisking.
  • Keep simmering queso on medium heat until you start seeing bubbles at the edge of the pot. You want cook the queso until its about to boil but do not bring it to complete boil.
  • Once queso is done, take it off the heat and keep it aside.

Assemble

  • Once fries are nice and crispy, take them out of the oven and top them with generous amount of topping mix. And bake it for extra 5 minutes.
  • Take it out of the oven and drizzle warm queso and enchilada sauce.
  • Sprinkle some chopped cilantro and scallions.
  • Mix ½ cup of cojita/feta cheese and 1 tsp of taco seasoning, Sprinkle that flavored Cotija cheese and cubed avocados. (this step of optional if you are missing cojita cheese or avocados)
  • Serve it immediately with lemon wedges and ice cold beer, soda or sparkling water!
