I love me a quick week day lunch that comes together with least amount of efforts. And to achieve such quick wholesome meal I like to prep some protein ahead of time. I personally have experienced that if I do not have some healthy meal prep done, I end up eating lot of junk that is not filling and of course not as healthy.

I am really trying to focus on incorporating more and more plant based protein in my meals. While keeping it high fiber and flavorful. At first I found it hard to eat so much protein everyday. But then I started playing around with many different plant based protein and prepping it with the flavors and texture of my choice. It has been a fun process playing around with lot of different protein packed vegetarian meals.

This Chipotle Tofu Salad Sandwich is an outcome of many of my trials and errors. And honestly one of my favorite sandwiches just like my PROTEIN PACKED VEGGIE SANDWICH. This Chipotle Tofu Salad Sandwich has some much needed plant based protein, lots of fiber and amazing flavors. I prepare Chipotle Tofu Salad ahead of time as part of my meal prep. It has baked tofu, crunchy veggies and fresh herbs. And the flavors and creaminess comes from protein packed chipotle flavored crema. This is one of easiest sandwiches I have made and love!

I have been obsessed with Big Mountain Soy Free Tofu lately. It is not only delicious but also has excellent macros. Chipotle Tofu Salad Sandwich has protein from tofu, good fats from avocado, fiber from fresh veggies, good grain from healthy bread and flavors from chipotle crema as well as fresh herbs. It is truly one of the best and easiest sandwich you could make in my opinion. This Chipotle Tofu Salad comes in very handy. You can use it for sandwiches or wraps. You can also make lettuce wrap with it or simply top it on sliced cucumber for a quick low carb snack.

The protein in this sandwich not only comes from tofu but also from chipotle crema. The chipotle cream is made with greek yogurt, cottage cheese, and a hint of mayo. The chipotle crema is so flavorful and extremely creamy. You will end up using it not only for this sandwich but also like spread, dressing or even a dipping sauce. It is not hard to incorporate protein in your vegetarian diet. You just have to be smart about using some key ingredients and pair them with right flavors and texture. Ingredients

Baked Shredded Tofu

  • 12 oz Big Mountain Soy Free Firm Tofu can be sub with any firm/extra firm tofu or choice of shredded protein
  • ¼ tsp Black Pepper
  • ½ tsp Oregano
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cayenne Pepper
  • ¾ tsp Salt
  • Avocado Oil Spray can be sub with choice of oil spray

Veggies and Herbs

  • 1 tbsp Finely Chopped Dill
  • 2 tbsp Finely Chopped Chives
  • ¼ cup Finely Chopped Green part of Scallions
  • ½ cup Finely Chopped Cilantro
  • ¾ cup Finely Chopped Red Onion
  • cup Finely Chopped Celery

Chipotle Crema

  • cup Fat Free Plain Greek Yogurt
  • ¼ cup 2% Fat Cottage Cheese Good Culture is preferred
  • 2 tbsp Chosen Food Mayo with avocado oil can be sub with any choice of mayo OR sour cream OR cream cheese
  • 1 tbsp Lemon Juice
  • 1 small Garlic Clove skip it if you do not like raw garlic taste
  • 1 Chipotle Pepper canned chipotle pepper with adobo sauce, 1/2 pepper for less heat
  • 2 tsp Adobo sauce from the can of chipotle pepper 1 tsp for less heat
  • ¾ tsp Salt
  • tsp Black Pepper Powder
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Cayenne Pepper skip for less heat

Other Ingredients

  • 8 slices Bread preferred seed and good grain high protein bread
  • 4-8 tbsp Plain Cream Cheese
  • 1-2 large Avocado
  • 2 cup Fresh Organic Baby Spinach

Instructions

Bake Tofu

  • Drain and shred tofu on a baking sheet. I like to place it on parchment paper. Sprinkle with all the spices listed under "Baked Shredded Tofu" and spray it with generous amount of avocado oil.
  • Coat tofu well with spices and oil without making it mushy. Lay it flat on a baking sheet and bake it on 375℉ for 20-25 min or until nicely brown but not burnt. Toss it half way to make sure it baked evenly.
  • Once baked, take it out of the oven and let it sit for few minutes to cool it down.

Prepare Chipotle Crema and Make Chipotle Tofu Salad

  • Blend everything listed under "Chipotle Crema" until smooth.
  • Place everything listed under "Veggie and Herbs" in a wide bowl. Place baked and cooled down flavored tofu in the same bowl.
  • Add in Chipotle Crema and mix everything gently until evenly coated but not mushy.

Assemble Sandwich

  • Toast 2 slices of bread, once toasted well spread generous amount of cream cheese on both slices.
  • Place thinly sliced ¼ or ½ an avocado on one toasted slice while place some baby spinach on the other.
  • Top baby spinach with generous amount of Chipotle Tofu Salad. Stack slice with avocado to make a sandwich. Cut it in half and enjoy with choice of beverage and crunchy chips! Repeat the steps under "Assemble Sandwich" to make rest of the 3 sandwiches.
