Chipotle Tofu Salad Sandwich

Baked tofu and crunchy veggie coated with high protein chipotle crema to make perfect creamy salad/filling for wholesome sandwich

Ingredients

Baked Shredded Tofu

  • 12 oz Big Mountain Soy Free Firm Tofu can be sub with any firm/extra firm tofu or choice of shredded protein
  • ¼ tsp Black Pepper
  • ½ tsp Oregano
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cayenne Pepper
  • ¾ tsp Salt
  • Avocado Oil Spray can be sub with choice of oil spray

Veggies and Herbs

  • 1 tbsp Finely Chopped Dill
  • 2 tbsp Finely Chopped Chives
  • ¼ cup Finely Chopped Green part of Scallions
  • ½ cup Finely Chopped Cilantro
  • ¾ cup Finely Chopped Red Onion
  • cup Finely Chopped Celery

Chipotle Crema

  • cup Fat Free Plain Greek Yogurt
  • ¼ cup 2% Fat Cottage Cheese Good Culture is preferred
  • 2 tbsp Chosen Food Mayo with avocado oil can be sub with any choice of mayo OR sour cream OR cream cheese
  • 1 tbsp Lemon Juice
  • 1 small Garlic Clove skip it if you do not like raw garlic taste
  • 1 Chipotle Pepper canned chipotle pepper with adobo sauce, 1/2 pepper for less heat
  • 2 tsp Adobo sauce from the can of chipotle pepper 1 tsp for less heat
  • ¾ tsp Salt
  • tsp Black Pepper Powder
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Cayenne Pepper skip for less heat

Other Ingredients

  • 8 slices Bread preferred seed and good grain high protein bread
  • 4-8 tbsp Plain Cream Cheese
  • 1-2 large Avocado
  • 2 cup Fresh Organic Baby Spinach

Instructions

Bake Tofu

  • Drain and shred tofu on a baking sheet. I like to place it on parchment paper. Sprinkle with all the spices listed under "Baked Shredded Tofu" and spray it with generous amount of avocado oil.
  • Coat tofu well with spices and oil without making it mushy. Lay it flat on a baking sheet and bake it on 375℉ for 20-25 min or until nicely brown but not burnt. Toss it half way to make sure it baked evenly.
  • Once baked, take it out of the oven and let it sit for few minutes to cool it down.

Prepare Chipotle Crema and Make Chipotle Tofu Salad

  • Blend everything listed under "Chipotle Crema" until smooth.
  • Place everything listed under "Veggie and Herbs" in a wide bowl. Place baked and cooled down flavored tofu in the same bowl.
  • Add in Chipotle Crema and mix everything gently until evenly coated but not mushy.

Assemble Sandwich

  • Toast 2 slices of bread, once toasted well spread generous amount of cream cheese on both slices.
  • Place thinly sliced ¼ or ½ an avocado on one toasted slice while place some baby spinach on the other.
  • Top baby spinach with generous amount of Chipotle Tofu Salad. Stack slice with avocado to make a sandwich. Cut it in half and enjoy with choice of beverage and crunchy chips! Repeat the steps under "Assemble Sandwich" to make rest of the 3 sandwiches.
