Peanut Tofu Stir Fry

Minimal ingredient quick and easy peanut tofu stir fry loaded with amazing asian flavors, simple veggies and crunchy peanuts.

I love me a good Chinese takeout. But knowing that most of their tofu dishes are made with fried tofu, I tend to avoid it. I know you can get any tofu takeout with steamed tofu but I personally do not like the texture of tofu that way. Making tofu stir fry at home is actually super easy, quick and lot healthier than take outs. This recipe I am sharing was a random clean out my fridge recipe with just few sauces, which ended up being a family favorite.

This Peanut Tofu Stir Fry requires just few ingredients and comes together super quick. I love that it is packed with protein and that much needed crunch from the veggies and peanuts. You can simply make this recipe without baking tofu, but I personally like to make it with baked version as the texture comes out perfect! By the time you chop your veggies and mix all the sauces, the tofu will be done baking!

Once the tofu is baked its just few simple steps that brings this dish together in no time. Cooking cubed veggies on high heat to char them then mix in baked tofu with sauce and peanuts. That is it! Doesn’t it sound easy, quick and delish?!?! I am telling you, once you make this recipe, you will be hooked. I used 4 different type of sauces in this recipe with black pepper. And to be specific which sauce I used, they are House of Tsang Szechuan Spicy Stir Fry Sauce, Hoisin Sauce, Vegan Oyster Sauce and Dark Soy Sauce. You can make this recipe with either Big Mountain Soy Free Tofu or any extra firm tofu of your choice. There are so many tofu recipes on my blog, this one is hands down one of my favorite. Ingredients

Baked Tofu

  • 16 oz High Protein Organic Super Firm Tofu  I get mine from Trader Joes
  • ½ tsp Salt
  • ½ tsp Black Pepper Powder
  • tsp Korean Red Pepper Powder (Gochugaru) cab be sub with 1 tsp Cayenne or Paprika or crushed red pepper flakes
  • 2 tbsp Cornstarch
  • spray avocado oil

Sauce Mix

  • 3 tbsp House of Tsang Szechuan Spicy Stir Fry Sauce
  • 2 tbsp Hoisin Sauce
  • 1 tbsp Vegan Oyster Sauce
  • 1 tsp Dark Soy Sauce
  • 2 tbsp water
  • ¼ tsp Black Pepper Powder

Other Ingredients

  • 2 Whole Dry Red Chilis
  • 2 tbsp Avocado Oil
  • ½ large Sweet Yellow Onion, cubed
  • ½ large Green Pepper, cubed
  • ½ large Red Pepper, cubed
  • ¾ cup Cubed Celery
  • ½ cup Salted Roasted Peanuts

Instructions

Baked Tofu

  • Remove any water from tofu and pat dry it. Cube it in medium sized pieces.
  • Coat cubed tofu with ½ tsp salt, ½ tsp black pepper powder, 1½ tsp Korean Red Pepper Powder (Gochugaru) and 2 tbsp of corn starch. Spray oil and toss them to ensure all seasoning is coated well.
  • Lay it flat on a greased baking pan and bake it on 425℉ for 25 min. Flip them half way through during baking step so that it is baked evenly from everywhere. Once done, keep it aside.

Make Peanuty Tofu Stir Fry

  • Mix everything listed under "Sauce Mix", keep it aside.
  • Heat up 2 tbsp of oil in a wok. Add in 2 whole dry red chili, cook for few seconds.
  • Add in cubed onions, red/green peppers and celery. Cook them on high heat until they are charred while still holds the crunch, toss them frequently.
  • Once veggies are charred, add in baked tofu cubes. Mix well.
  • Pour in sauce mix and salted roasted peanut. Mix it all well and enjoy either by itself or side of white/fried rice.
