Refreshing tofu ceviche made with crunchy veggies and tangy garlicky flavors that requires zero cooking.

Do you ever feel like eating a delicious meal but without cooking anything?!?! I don’t know about you but that is how I feel pretty much the whole summer. I love light and fuss free quick meals that is also great for meal prep and nutrients dense. For example this Tofu Ceviche! I know ceviche is made with shrimps but being a vegetarian I don’t consume meat. Which does not mean that I cannot enjoy certain dishes that can be made with a smart substitutes. Tofu is very versatile super food, and makes a great candidate for ceviche due to its spongy absorbent nature.

The whole idea behind ceviche is to have your protein soak up tangy lime dressing and mix it with crunchy veggies. It makes the best summer time meal when you do not feel like turning the stove on while it 90+ degrees outside. I love using tofu for ceviche as it absorbs the flavors so well and great to make ahead. Make a big batch on a weekend and enjoy it throughout the week. The lime dressing holds amazing flavors and super simple to make. Adding crunchy veggies like onions, jalapenos, cucumber, tomatoes. Along with fresh herbs like cilantro and scallions adds lot of freshness to this dish.

My favorite part of this is the crunch, not only ceviche holds amazing crunch but also pairing it with tostada or chips takes it to the next level. I like to add avocados and feta cheese for healthy fats as well as hot sauce for great flavors. My husband likes to top it on crunchy tostadas while I like to scoop it with protein chips like quest to add that extra layer of protein and crunch.

Tofu Ceviche

Ingredients

  • 12 oz Medium Firm Tofu, tiny cubes I like to use Big Mountain Soy Free Tofu. Press down to remove water
  • 1 med Finely Chopped Sweet Red Onion
  • 1 med Finely Chopped Jalapeno
  • 6 Finely Chopped White Part of Scallions
  • 5 Finely chopped Mini Cocktail Cucumbers
  • 3 med Finely Chopped Roma Tomatoes
  • 6 Finely Chopped Green Part of Scallions
  • ½ bunch Finely Chopped Cilantro
  • 2 Cubed Avocadoes
  • 6 oz Crumbled Feta Cheese
  • 4-6 tbsp Hot Sauce I prefer yellow bird jalapeno hot sauce
  • 12 Guerrero Yellow Tostadas 2 per serving, I also like using quest protein chips instead of Guerrero Yellow Tostadas sometimes for adding more protein

Lime Dressing

  • 3 large Freshly Squeezed Lime
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Dark Soy Sauce
  • 2 tbsp Tomato Ketchup
  • ½ tsp Black Pepper Powder
  • ½ tsp Onion Powder Powder
  • ½ tsp Garlic Powder Powder
  • ¾ tsp Salt ½ + ¼
  • 1 small Garlic Clove, minced

Instructions

  • Mix everything listed under "lime dressing" with ½ tsp of salt, leave ¼ of salt for later. Keep it aside.
  • In a large mixing bowl, add tiny cubes of tofu, finely chopped onions, finely chopped jalapeno and white part of scallions. Drizzle "lime dressing" over it and mix gently to prevent tofu from breaking. Cover and refrigerate it for 30 minutes.
  • After 30 min, add in finely chopped cucumber, finely chopped tomatoes, finely chopped green part of scallions and finely chopped cilantro along with ¼ tsp of salt. Mix everything gently and its ready to serve!
  • If using Guerrero Yellow Tostadas, place generouse amount of tofu ceviche on each tostada. Top it with avocado cubes, drizzle of hot sauce and crumbled feta cheese. Enjoy it with choice of beverage. If eating with chips, simply scoop ceviche and enjoy!
