Protein Packed Veg Fajita Pasta, spicy garlicky creamy fajita pasta that is made with high protein plant based chipotle flavored sausage, crunchy veggies, tofu & cottage cheese!

I have been in eat more protein era. And why would I not be as a 40 year old woman who is trying to keep up with her muscle mass as she grows. To be honest, consuming decent amount of protein as a vegetarian is not hard. The challenge I face with protein packed meal is that they are not really fun ones. And I personally have extremely hard time eating food that does not really bring me joy. That means my meals have to be not super flavorful, filling, packed with much needed nutrients, quick, easy and fuss free. I know that is a lot to ask for when it come to food.

But you do not have to worry about such meals as I got you all with my hundreds of trial and error recipes. And finally ends up being the one that checks all the boxes mentioned above. This recipe is certainly one of those. A hefty serving of extremely delicious pasta that is quick and easy to make with just few ingredients. It packs easy 40+ grams of vegetarian protein! I know it is hard to believe right?!?! But trust me with this one. You can count macros for this one, you’ll be surprise how amazingly macro friendly this is. And also very joyful meal at the same time!

There are some few ingredients that helps this meal be so macro friendly. Field Roast Spicy Chipotle Plant Based sausage is packed with plant protein. Goodles is a great brand for protein pasta that actually tastes good. Using silken tofu smoothly blended with cottage cheese makes an outstanding substitute for heavy cream. And we all know that fresh crunchy veggies like onions and peppers are always great for your diet. And not to mention fresh herbs and spices like hot red chili, lots of garlic, cilantro and scallions. The flavors come together so nicely with fresh and dry spices mentioned below in the recipe.

Protein Packed Veg Fajita Pasta

Protein Packed Veg Fajita Pasta, spicy garlicky creamy fajita pasta that is made with high protein plant based chipotle flavored sausage, crunchy veggies, tofu & cottage cheese!

Ingredients

  • 8 oz Uncooked Protein Penne Pasta, preferred one is Goodles
  • 4 tubes Field Roast Spicy Chipotle Plant Based Sausages
  • 1 med Sweet Yellow Onions, sliced
  • ½ x-large Green Pepper, sliced
  • ½ x-large Red Pepper, sliced
  • 1 Fresh Hot Red Chili Pepper, finely chopped seeds and veins removed if you want to tame the spice level down
  • 3 clove Extra Large Garlic, minced
  • 3 pump Avocado Spray
  • 3 tbsp Salted Butter
  • 8 oz Silken Tofu
  • ½ cup 2% Good Culture Cottage Cheese
  • tsp Salt
  • 1 tsp Dry Oregano
  • 1 tsp Garlic Powder
  • ½ tsp Crushed Red Chili Flakes
  • ½ tsp Black Pepper Powder
  • ½ tsp cayenne Pepper Powder
  • 3 tsp Taco Seasoning
  • ½ cup Pasta Water

Instructions

  • Boil pasta as per package instructions, leave them al dente and save ½ to 1 cup of pasta water.
  • Spay non stick wide shallo pan, preferably with avocado oil spay. Cook sliced Field Roast Spicy Chipotle Plant Based Sausages on both side until crispy. Once done, take them out of the pan and keep it aside.
  • In the same pan, melt salted butter. Add in finely chopped fresh hot red chili and minced garlic. Cook it on medium heat for 30-45 seconds without browning/burning them.
  • Add in sliced onions with ½ tsp of salt. Cook them on medium heat for 1-2 minutes.
  • Add in sliced green and red peppers. Mix well and cook for couple of minutes. The onions should start to translucent by now.
  • Blend silken tofu and cottage cheese until completely smooth. Add this smooth mixture in the pan along with ½ cup of pasta water and all the dry seasoning mentioned above. Mix well and bring it to simmer.
  • Add in boiled pasta with cooked sausage slices. Mix well until everything is well coated with the sauce.
  • Garnish it with fresh cilantro and scallions. Serve it while its hot with choice of beverage!
