Pickled turmeric roots are one of the best and one of a kind Indian condiments by far. There are two kind of turmeric roots you can find, one is yellow and one is white. White turmeric naturally grows in the Indian Himalayas and is known for its medicinal properties. Although it is very seasonal, and mainly available during monsoon season. On the other end, Yellow turmeric is more commonly found in the South of India. White turmeric is brighter than yellow turmeric. It tastes more bitter as well. One of its main benefits, however, is that it stains much less than yellow turmeric.

I have mainly seen yellow turmeric roots available here in USA, specially on east-coast. Luckily I found amazing organic yellow turmeric roots at my local Costco. I immediately thought about this Indian style pickled turmeric. Usually this pickles are a combination of white and yellow turmeric. But since while ones are not easily available around here, I like to just add small amount of fresh ginger roots to this pickle. It gives that amazing kick to this pickle. Adding spicy green chilis like jalapeños adds amazing flavors and spiciness to the pickles.

This pickle also lasts for 2-3 months in the refrigerator. It makes a great long lasting side. It goes so well with subzi, rotis, paratha, thepla etc. This plant-based side is such an effortless goodie that adds amazing health benefits to your daily diet without making a huge efforts. Pickled Turmeric Roots

Ingredients

  • lb Fresh Turmeric Roots
  • 1 large Ginger Roots
  • 5 large Jalapeños
  • 2 Large Lemon
  • 2 tbsp Salt

Instructions

  • Wash and drain both turmeric roots and ginger roots.
  • Peel all the roots and slide them in any shape and size you like. Make sure to ware gloves during peeling and chopping process.
  • Slice jalapeños in any shape and size you like, do not discard the seeds and vein. Make sure to ware gloves during peeling and chopping process.

  • Combine sliced roots and jalapeños along with juice of two large lemon and two tbsp salt.
  • Combine well and store it in a glass mason jar inside the fridge. It should be pickled within 3-4 days. Make sure to shake the jar once a day for 3-4 days. It stays good in the refrigerator for up-to 2-3 months

  • Serve them with subzi and roti, parathas, thepla, puri, bhakhri, phulka etc!
