Peri Peri Tofu Wraps

I love me a good loaded wrap. However when you get veggie wraps outside, you do get it loaded with veggies and cheese but it is always lacking that much needed protein. Which is why I like to make them at home. Where I not only add plant protein to my wraps but also have flexibility to make the dressing as healthy as possible. This wrap is high in fiber as well protein with lots of flavors. The protein comes from tofu as well as avocado ranch. And fiber comes from the greens.

Peri Peri Tofu Wraps

So many of you have made my Peri Peri Tofu Wings over the years and have absolutely loved. I personally like this way of eating tofu for two reasons. It is absolutely delicious and takes minimal ingredients to make. I used almost same recipe to make Peri Peri Tofu Cutlets for this wrap. These cutlets are great on their own, as a salad topper and of course as a wrap filler. I like to pair them with a mix of crunchy lettuce and kale (or baby spinach) coated with creamy avocado ranch. Creamy avocado ranch is also packed with protein as it has cottage cheese and greek yogurt.

To make the process simpler, you can simply use store bought avocado ranch or even regular ranch. I like to make it at home so that I can use greek yogurt and cottage cheese as a base for this dressing. It is thick, creamy and absolutely delicious. You can make a big batch ahead of time and use for this wrap as well as salad dressing, spread and dipping sauce.

Peri Peri Tofu Wraps

One more thing I would like to mention is that I like using low card tortillas for this wrap to keep it macro friendly, but you can simply use any tortilla of your choice. Or simply skip the tortilla and eat it like a salad. Lettuce & kale coated with avocado ranch and topped with peri peri tofu cutlets. Either way it is absolutely delicious and hearty!

Peri Peri Tofu Wraps

Ingredients

Peri Peri Tofu Cutlets

  • 18 oz Firm or Extra Firm Tofu
  • 1 cup Seasoned Panko 4C Bread Crumbs Seasoned Panko
  • ¼ cup Corn starch
  • ¾ cup Choice of Store bought Peri Peri Sauce ½ cup to coat tofu before baking, ¼ cup after baking. I like Trader Joe's peri peri sauce

Avocado Ranch (You can simply use store bought Avocado Ranch or regular Ranch)

  • ½ Avocado
  • cup Fat Free Plain Greek Yogurt
  • ½ cup 2% Cottage Cheese preferably Good Culture brand
  • ½ tsp Dijon Mustard
  • 0.25 oz Fresh Dill
  • 0.25 oz Fresh Chives
  • ¼ cup Fresh Cilantro
  • 1 small Garlic Clove
  • ¼ Jalapeno
  • ¼ tsp Salt
  • ¼ tsp Black Pepper Powder
  • 1 tsp Ranch Dip Mix
  • ½ Lime
  • 2-3 tbsp Water

Other Ingredients

  • 4 large Wrap Tortilla I like la banderita carb counter large wrap
  • 2 large Romaine Lettuce Hearts cut, washed and water removed
  • 2 handful Kale or Baby Spinach

Instructions

Bake Peri Peri Tofu Cutlets

  • Remove tofu from the package. Discard the water. Cut tofu evenly in 12-16 slices.
  • Place each slice next to each other on a cotton clothe in line making sure each slice is evenly tall. Wrap clothe over the slices.
  • Place cutting board on top of the wrapped tofu sliced and an heavy object (e.g Mortar) right in the middle of that cutting board for 25-30 minutes. so the weight is evenly distributed over all the tofu slices.
  • Place corn starch in one bowl, peri peri sauce in one bowl, and place panko in a plate. Pre-heat oven on 420° F.
  • After 25-30 minutes, first dust a tofu slice with corn starch, then dip it in peri peri sauce, then coat it well with panko then place it on a baking sheet on top of parchment paper. Repeat this step for each tofu slice. Coat them with oil spray.
  • Bake the tofu slices/wings for upto 30 minutes. Turn them half way through. You can bake it longer if you wish to crisp it more, be sure to not burn them.

Make Avocado Ranch (skip this if using store bought)

  • Blend everything listed under "Avocado Ranch" to desire consistency.
  • Coat lettuce and kale (or spinach) with some avocado ranch. Do this step right before making wraps to avoid soggy salad. Leave some avodaco ranch to spread on each tortillas.

Make Wraps

  • Spread some avocado ranch on each tortilla. Place lettuce/kale mix in the center of the wrap on top of avocado ranch layer.
  • Cut 3-4 tofu cutlets in small strips and place them on top of lettuce layer. Drizzle some peri peri sauce on top.
  • Add a little more lettuce mix on top of tofu layer. Wrap it tightly without ripping the tortilla. Crisp them on all sides using cast iron with some cooking oil spray.
  • Once crispy, cut them in half and serve with choice of chips and beverage!
