Honey Chipotle Halloumi Tacos

Chipotle Honey Halloumi Tacos, easy weeknight meal with honey chipotle flavored baked halloumi fajitas topped with refreshing peach salsa and creamy avocado crema.

Halloumi is a type of cheese that is on a firm side with salty flavors. It cooks very well and absorbs flavors amazingly. Which makes it a great candidate for flavor loaded taco filling. It has good amount of protein, which is great as vegetarian protein source for many quick cooking dishes! Since this cheese is naturally on salty side, adding some spicy sweet smokey flavors really balances out halloumi well.

When you think of spicy smokey flavors, the first thing that comes to mind is Chipotle peppers. Chipotle peppers with adobo sauce are one of my favorite item to pack lot of flavors in a meal. Adding a hint of honey to this flavor family takes this tacos to the next level! I am all about packing quick and easy dishes with lot of flavors. Which is the reason I love making this Halloumi cheese like fajita in a sheet pan to make the cooking process easy.

Sheet pan fajitas are great week night meal idea. Simply toss everything in a sheet pan and bake it. While your Halloumi fajita bakes, you make topping and spread for the taco. This meal truly comes together in less than 30 minutes. The heart of this quick meal is its flavor palette. In other words, Honey Chipotle Vinaigrette! This Honey Chipotle Vinaigrette is packed with amazing flavors and great to make ahead. Not only it is good for these tacos but also can be used as salad dressing, dipping sauce, marinade etc.

The halloumi fajitas are flavored with Honey Chipotle Vinaigrette as well as the peach salsa also has a hint of it. You can certainly use paneer, firm tofu, or choice of protein instead of halloumi as substitutes. I sometimes use this Honey Chipotle Vinaigrette and blend it with mix of greek yogurt, cottage cheese and mayo to make amazing chipotle aoli. The options are endless with this Vinaigrette. The peach salsa balances out the salty halloumi so well and avocado crema add that much needed creaminess. Instead of making your own salsa, you can simply use store bought peach/mango/pineapple salsa and ready to use guacamole to make it even easier. This tacos are truly like a party in your mouth when you take that first bite!

Honey Chipotle Halloumi Tacos, easy weeknight meal with honey chipotle flavored baked halloumi fajitas topped with refreshing peach salsa and creamy avocado crema

Ingredients

Honey Chipotle Vinaigrette

  • ½ cup Chipotle Peppers in Adobo Sauce
  • 2 tbsp Honey
  • ¼ cup Red Wine Vinegar
  • ¼ cup Avocado Oil
  • ½ cup Water use half the amount for thick Vinaigrette if preferred
  • 3 large Garlic Cloves
  • 1 tsp Salt
  • ½ tsp Dry Oregano
  • ¼ tsp Black Pepper Powder

Baked Halloumi Fajita

  • 250 gm Sliced Halloumi Cheese, thickness as desired can be sub with paneer, firm tofu or choice of protein
  • ½ large Sliced Yellow Sweet Onion
  • ½ large Sliced Green Pepper
  • ½ large Sliced Red Pepper
  • ½ tsp Salt
  • ¼ tsp Black Pepper Powder
  • ¼ tsp Smoked Paprika
  • ¼ tsp Dry Oregano
  • ½ tsp Garlic Powder
  • 1 tsp Onion Powder
  • ¼ cup Honey Chipotle Vinaigrette as mentioned above

Peach Salsa (store bought peach/mango/pineapple salsa works just fine as well!)

  • 2 medium Finely Diced Peach pineapple, mango, kiwi can be used instead of peach
  • 2 small Finely Diced Tomatoes
  • ½ Finely Diced Red Onion
  • ¼ cup Finely Chopped Cilantro
  • ½ Finely Chopped Jalapeno
  • ½ tsp Salt
  • ½ tsp Cumin Powder
  • ½ Lime Juice juice of ½ lime
  • 2 tbsp Honey Chipotle Vinaigrette as mentioned above

Avocado Crema (store bought guacamole works just fine as well!)

  • 1 Large Avocado
  • ¼ bunch Cilantro
  • 1 Scallion
  • 2 small Garlic Clove
  • ½ Lime Juice juice of ½ lime
  • 2 tbsp Avocado Oil
  • ½ tsp Salt
  • ½ tsp Black Pepper Powder
  • ½ Jalapeno
  • 1 Green Tomatillos

Other

  • 8 small Taco Tortillas

Instructions

Honey Chipotle Vinaigrette

  • Blend everything listed under "Honey Chipotle Vinaigrette" until smooth. I like to store in the squirt bottle and refrigerate it for upto a week. It is great for marinating, as salad dressing, dipping sauce etc.

Peach Salsa

  • Mix everything listed under "peach salsa". Refrigerate it for 20-30 minutes, while you make Halloumi fajita.

Avocado Crema

  • Add everything listed under 'Avocado Crema" in a food processor, except avocado. Process these ingredients until they are finely chopped in the processor by doing few pulses at a time and checking the consistency. Do not make a paste out of it.
  • Add avocado to the chopped ingredients and pulse the processor for few more times until you find desired consistency. Refrigerate it until ready to use.

Bake Halloumi Fajita & Assemble Tacos

  • Pre heat oven on 390℉. Toss slice onions, green & red pepper and halloumi slice with the spices listed under "Baked Halloumi Fajita" along with ¼ cup of Honey Chipotle Vinaigrette. Halloumi cheese breaks easily, be gentle while tossing everything so it does not crumble up.
  • Place the fajita mix on a baking tray in a single layer. Bake it for 20 minutes.
  • Once halloumi fajita is ready, warm up taco tortilla on an open flame to get that charred look and flavors.
  • Layer avocado crema on warm tortilla, then top it with halloumi fajita. Top that with peach salsa with some drizzle of Honey Chipotle Vinaigrette! Serve it with lime wedge and choice of beverage!
