Baked Mixed Berry Oatmeal
Organic rolled oats baked with mixed berries, banana, walnuts, coconut flakes and cinnamon along with almond milk and flax meal to make a perfect warm vegan gluten-free breakfast!
Breakfast is the most important part of your day. At least that’s what they say! In my household, we like to start our day with nutritious and delicious meal. This recipe is a perfect example of that. It is very quick to fix. Literally put all ingredients together and bake it!
It is loaded with berries, banana, walnuts and coconut flakes. It has just a right amount of sweet kick from cinnamon and maple syrup. It is baked with unsweetened almond milk and flax meal which makes it completely vegan! It is also gluten-free since I am using gluten-free rolled oats! Oh and did I mention that it is a crowd pleasure?!?!

Baked Mixed Berry Oatmeal
Ingredients
- 1 cup Gluten Free Rolled Oats
- 2½ cup Unsweetened Almond Milk less if you want to make it a bit firm, and not ooey gooey
- 2 tbsp Flax Meal
- 1 tsp Baking Powder
- 1 tsp Cinnamon Powder
- 2 tbsp Maple Syrup 2 tbsp for less sweetness, 3 tbsp for more
- ¼ cup Coconut Flakes
- ¼ cup Chopped Walnuts
- 1 Large Banana, sliced
- ½ cup Blueberries
- ½ cup Strawberries
- ½ cup Blackberries
- ½ cup Rasberries
Instructions
- Preheat oven to 375°F.
- Mix all ingredients in a deep baking pan.
- Bake it on 375°F for 35 minutes.
- Serve it hot with extra almond milk and maple syrup if desired!
