Veg Frankie!

Yet another street food from India! Frankie very famous vegetarian street food. It is similar to kathi roll or I would say veggie wraps! So many good veggies are in this dish along with spicy green and red chutney. This dish is a perfect combination of great flavors and perfect textured food!

When you look at the Veg Frankie recipe you might think it is there is all to do at once. And I agree, that is why I put this dish in prep ahead category. You make everything I mentioned in the recipe below ahead of time. When you are ready to eat you just warm the kebabs up in a toaster oven and assemble it together! Now does that sound a quick meal?!?! It does to me!

  • Mix all veg kabab ingredients together to make a somewhat firm kebab mixture, firm enough to shape kababs that won't break while cooking!

  • Make medium size kababs and cook it on the pan with some oil on both sides until golden brown.

  • It is best to make these kebabs right after you make the mixture. If you keep the mixture for too long, it starts to loose water from the veggies and will not form into kebab shapes. If it starts becoming loose, adding some bread crumbs will help!

  • Once all kebabs are cooked on a pan, place them on a baking sheet and bake it on 350°F for 30-40 minutes.
