Super moist Tofu Caprese Sandwich with flavored tofu, juicy tomato, crunchy onions and super green arugula packed between herbed focaccia bread with edamame and cottage cheese spread that holds pesto flavors!

Summers are all about light and flavorful meals that does not require to much cooking. This sandwich is just the right candidate for such meals. I love me a good loaded veggie sandwich like Focaccia Caprese Sandwich. The only thing I wish for caprese sandwich is to have some much needed protein to make it a complete meal. Caprese sandwiches are loaded with amazing pesto flavors, fresh juicy tomatoes and creamy dreamy cheese. I truly love all those three key ingredients in my caprese sandwich. So I thought why not play around with some protein packed ingredients to bring those in a sandwich.

Now lets talk about those key ingredients. First things first, we need some good pesto. I am on a cottage cheese and edamame kick these days as they hold a lot of protein and fiber. So I though why not use those 2 ingredients to make pesto like spread for this sandwich. For pesto flavors we of course need fresh basil and lot of garlic. Those two with edamame and cottage, some EVOO, salt, pepper and a hint of ranch dip mix will make an outstanding protein packed spread for a sandwich. I also have a KALE ARUGULA PESTO that you can use in this sandwich.

Now that we have pesto flavors locked in, let’s talk about the cheese. The spread holds decent amount of cottage cheese which brings much needed creaminess in this recipe. So I thought why not balance the fats and creaminess out by using flavored tofu. That is thinly sliced and coated with Submarine sandwich oil/dressing along with parmesan cheese and red chili flakes. The combination is just so good with flavors as well as the texture. Now you have an additional level of protein that is not high in fats.

We got two main items down with tons of protein, fiber and has much needed flavors for this sandwich. Rest is easy peasy. Fresh veggies like tomatoes, red onions, baby arugula along with balsamic glaze, salt and pepper. That is all you need between flavorful and soft herb focaccia to make an amazing Caprese Sandwich.

You can make the spread ahead of time as part of your meal prep. It is not only great for this sandwich but also makes a great salad dressing as well as pasta sauce. You can also prep tofu ahead of time and keep it refrigerated for few days. Then it is just a matter of assembling when you want a bangin sandwich in no time!

Tofu Caprese Sandwich

Ingredients

Edamame & Cottage Cheese Pesto

  • 1 cup 2% Good Culture Cottage Cheese
  • ¾ cup Shelled Edamame
  • 1 cup Fresh Basil tightly packed
  • ¼ cup Extra Virgin Olive Oil
  • 4 clove Garlic
  • 1 tbsp Hidden Valley Original Ranch Dips Mix
  • ½ tsp Salt
  • 1 tsp Freshly Cracked Black Pepper
  • ½ Juice Lime or Lemon

Flavored Tofu

  • 12 oz Medium Firm Tofu preferably big mountain soy free tofu
  • 1 cup Grated Parmesan Cheese
  • ½ cup Submarine Dressing/Sandwich Oil or simply use mix of EVOO + red wine vinegar + Italian seasoning + salt & pepper
  • 1-2 tsp Red Chili Flakes

Other Ingredients

  • 12 oz Herb Focaccia Bread
  • 2 cup Baby Arugula
  • 1 large Tomato, sliced
  • ½ large Red Onion, sliced Beefsteak tomatoes or heirloom tomatoes
  • Balsamic Glaze
  • Salt
  • Freshly Cracked Black Pepper
  • Submarine Dressing/Sandwich Oil

Instructions

Make Edamame & Cottage Cheese Pesto

  • Blend everything listed under "Edamame & Cottage Cheese Pesto" to coarse spread like consistency. Keep it aside.

Prepare Flavored Tofu

  • Press down tofu to get rid of as much water as possible.
  • Slice it thin, coat it first with Submarine Dressing/Sandwich Oil and then with mix of grated Parmesan and red chili flake. Keep it aside.

Assemble Sandwich

  • Cut open Herb Focaccia Bread from the middle to make two layers.
  • Spread both sides with generous amount of Edamame & Cottage Cheese Pesto.
  • On one side, place flavored tofu, top it with thinly sliced red onions. Sprinkle salt & pepper with a drizzle of balsamic glaze.
  • Top it with baby arugula, a drizzle of Submarine Dressing/Sandwich Oil & balsamic glaze.
  • Top it with sliced tomatoes with sprinkle of salt & pepper.
  • Stack the other side of the bread. Cut the sandwich in 6-8 pieces. Enjoy it with choice of beverage & crunchy chips!
