Super Green Guacamole
Super Green Guacamole made with avocados, tomatillo, scallions, cilantro, serrano peppers, garlic, lime juice, oil, salt and pepper.
This recipe requires the list amount of work and is a party pleaser. Put ingredients into the food processor, keep doing pulses for few times until you reach the right guac consistency and ahí tienes! Use it with chips, tacos, eggs or any Mexican dish!
Super Green Guacamole

Ingredients
- 2 Avocados
- 1 large Tomatillo
- 4 Scallions
- ½ bunch Cilantro
- 1 Serrano Pepper 1½ for extra kick!
- 2 clove Garlic
- 2 tsp Lime Juice more if extra tanginess is preferred
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Salt
- 1 tsp Black Pepper
Instructions
- Take the skin off of tomatillo. Add skinned tomatillo, scallions, cilantro, serrano pepper, garlic, extra virgin olive oil, salt and black pepper to a food processor or a chopper.
- Process these ingredients until they are finely chopped in the processor by doing few pulses at a time and checking the consistency. Do not make a paste out of it.
- Add 2 avocados to the chopped ingredients and pulse the processor for few more times until you find good guac consistency, do not form a paste.
- Taste the guac and see if it needs any lime juice or salt, if so add and pulse it for couple of time.
- Serve it with chips, tacos, eggs or as a side with any Mexican food!
