Loaded Veggie Wrap
Veggie wrap loaded with veggie petties and fresh crunchy veggies, spiced up with harissa mayo and spicy avocado chutney!
What a scary time we are going through right now. This coronavirus has all of us forced into quarantine ourselves. One of the biggest challenges during this time is to feed yourself and family decent pantry friendly meals. This recipe falls into that category. It uses frozen petties, shelf friendly tortillas, some long lasting condiments and basic vegetables. This delicious dish comes together very quickly with least amount of cooking!
I like to keep frozen veggie burgers in my freezer for making quick wraps! My preferred one is Morningstar Chipotle Black Bean Burgers! They also have chipotle black bean crumbs which is great for the same veggie wraps, salad, eggs, pasta etc. I warm it up and pair it with crunchy veggies to make a quick healthyish wrap.
This wrap has the veggie petties, crunchy vegetables flavored with chaat masala, cheese, harissa mayo and spicy avocado chutney. It is unbelievably flavorful and super quick to make! The cheese is optional if you want to make it dairy free meal, the mayo could also be vegan mayo! Serve it warm with side of crunchy chips, tangy pickles and spicy avocado chutney to give it that extra kick!

Veggie Wrap
Ingredients
- 2 Flavored Wraps
- 2 Choice of Veggie Petties TJ's masala burger, morning star black bean chipotle, beyond burger etc
- 2 slices Cheese
- 2 tbsp Mayo can be sub with TJ's Tartar sauce, cream cheese, sour cream, greek yogurt etc
- 1 tbsp Harissa can be sub with sriracha, red thecha, TJ's bomba, lasaniyu marchu etc
Veggie Mix
- ¼ cup Sliced Sweet Onions
- ¼ cup Multi Color Sliced Peppers
- ¼ cup Sliced Tomatoes
- ½ cup Chopped Baby Spinach
- 1 tsp Chaat Masala
- ¼ tsp Black or regular salt
- ¼ tsp Black Pepper Powder
Spicy Avocado Chutney (or simply use choice of Green Chutney)
- ½ Avocado
- 1 cup Cilantro
- 1 tbsp Lime Juice
- 2 cloves Garlic
- 1 tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Extra Virgin Olive Oil
- 1 Serrano Pepper
Instructions
Make Spicy Avocado Chutney
- Blend all spicy avocado chutney ingredients in a blender till smooth or little chunky based on your preference, add little water at a time if needed to blend. Keep it refrigerated.
Make Veggie Mix
- Mix all ingredients listed under veggie mix and keep it aside or put it in the refrigerator if making ahead of time. Keep it mind that all these veggies will loose some water after adding chaat masala and salt to it and if made way ahead of time.
Assembly
- Mix 2 tbsp mayo and 1 tbsp harissa in a bowl and keep it aside.
- Warm up veggie petties in a pan and make it crispy. You can crumble it up if you prefer crumbs in your wrap instead of big pieces of petties.
- Warm up flavored tortilla.
- Spread decent amount of harissa mayo in the middle of the warm tortilla
- Place cheese on top of harissa mayo spread.
- Place decent amount of veggie mix on top of cheese layer.
- Place crispy veggie petties cut in half or the crumbs of the veggie petties.
- Spread spicy avocado chutney on top of petties layer.
- Coat chopped spinach with spicy avocado chutney and place it on top of petties layer.
- Wrap the tortilla tight covering all the goodies in it.
- Warm the wrap up on both side on the skillet or pan. Make the other wrap same way!
- Cut it in half and serve it with side of chips, pickles and spicy avocado chutney.
