Kanda Bataka Toasties – Toasted sandwich using leftover onion potato curry, cheese, chutney!!

Onion potato curry is one of the easiest and commonly made Indian curry. It can be made many different ways. And there are so many ways you can enjoy this goodie. You can just use it as part of your Gujarati thali with Phulka RotliGujarati dal and bhaat. Or like taco, burrito, frankie, and fav way is in sandwiches!! You can even make it a little runny and eat it with plain khichdi and Gujarati Kadhi. I mean the options are endless!! And did I mention that it is very economical dish?!?! It does not cost a whole lot to make this dish. You will find many lower middle class families making this dish on regular basis for that very reason, like my family did when I was growing up!

Onion Potato Curry

Making toasties out of leftover kanda bataka shaak is my absolute favorite way of eating this deliciousness. The combination of spicy onion potato curry, cheese and spicy green chutney or avocado chutney along with raw onions, sriracha sauce and Jiradu/Chaat Masala/Sandwich Masala is nothing but an absolute haven!! This also makes a great option for kids or even adult lunch lox. You can honestly use any dry curry to make this kind of quick and easy sandwich. Its the best way of using leftovers and make a fun way of eating vegetables!!

Ingredients

Onion Potato Dry Curry – Kanda Bataka Shak (use this link to make the curry)

Spicy Green Chutney (use this link to make the chutney) OR Spicy Avocado Chutney (use this link to make avocado chutney)

Other Ingredients

  • 8 slices Sandwich Bread
  • 16 slices Deli Style Sliced Sharp Cheddar/American Cheese
  • ¼ cup Spread Butter
  • ¼ cup Sriracha Sauce
  • ¼ cup Thinly Sliced Onions
  • ½ tsp Jiradu/Chaat Masala/Sandwich Masala

Instructions

  • Make onion potato dry curry as instructed in the linked recipe.

  • Make spicy green chutney or avocado chutney as instructed in the linked recipe.

  • Spread butter on all sandwich breads.
  • Spread green chutney or avocado chutney on all sandwich breads on top of butter layer.
  • Place sliced cheese on 4 sandwich breads on top of chutney layer.
  • Place some onion potato dry curry/kanda bataka shaak on 4 sandwich bread on top of cheese layer.
  • Sprinkle finely chopped/sliced onions on top of onion potato dry curry/kanda bataka shaak layer.
  • Drizzle sriracha sauce on top of onions layer.
  • Sprinkle some Jiradu/Chaat Masala/Sandwich Masala on top of onions layer.
  • Place sliced cheese on top of loaded sandwich bread, on top of sriracha layer.
  • Stack other sandwich bread (on that is coated with butter and chutney), chutney side facing the filling of the sandwich.
  • Put some pressure on the stacked sandwich with palm of your hand to push all the layers down a little.
  • Spread butter on both side of the sandwich.
  • Toast it using any sandwich maker until it gets golden and crispy on both sides!
  • If you do not have a sandwich maker, you can use tawa to toast the sandwich putting some pressure on top with spatula. Do it on both sides of the sandwich.
  • Serve it hot with extra chutney, tomato ketchup and crunchy potato chips!!
