Indian Street Style Shakshuka
Indian Street Style fried egg loaded with spicy onion tomato curry and fresh green garlic sautéed with green chilis to make desi shakshuka! This makes a perfect quick gluten-free meal within minutes!
Street style eggs in India are the best way to eat eggs! There are so many different ways to make them which is mind blowing to me. Spicy omelet, half fry, kheema, egg paplet, egg gotado, bhurji etc. This dish is a good mix of street style half fry and shakshuka.
Egg half fry is made like fried eggs but with lots of oil and spices. The egg is cracked open on the pan with good amount of oil and that hot oil gets basted on to egg using spoon to cook the egg from the top. Then it is topped with choice of spices, onion tomato curry and the best topping is generous amount of fresh green garlic! I made this half fry egg on a cast iron on very low heat, topped it with spicy onion tomato curry as well as fresh green garlic and cilantro sautéed with oil and hot green chilis. I used less oil then the authentic half fry recipe. You can serve this with any type of bread or rotis!

- ½ tsp Garam Masala
- ½ tsp Salt
- ¼ tsp Black Pepper Powder
- ½ tsp Chopped Hot Green Chilis

Instructions
Prepare Green Garlic
- Heat 1 tbsp of oil in a pan. Once hot, saute fresh green garlic (or frozen green garlic) along with chopped hot green chilis, tiny bit of ginger and salt.
- Saute on low/medium heat for 3-4 minutes. Add ¼ cups of chopped cilantro, mix well and take it out of the pan and keep it aside.
Prepare Onion Tomato Curry
- Heat 1 tbsp of oil in the same pan. Saute finely chopped onions until translucent.
- Add shredded tomatoes (without skin), chopped green chilis, red chili powder, salt, pepper and garam masala. Saute on medium heat until the oil starts to separate.
- Once ready, take it off the heat and keep it aside.
Assembly
- Heat 3 tbsp of oil in an cast iron. If you do not have cast iron, use any shallow pan.
- Crack 6 eggs in the pan before oil gets hot while keeping the heat on low. Sprinkle salt, black pepper powder and red chili powder on all cracked eggs inside the pan.
- Keep cooking the eggs on low heat until you get the yolk to cook the way you like! There should be enough oil by the pan edges, carefully scoop that oil with a spoon and keep poring it on each yolk. That will help yolk to cook from the top as well.
- You can also cover the pan to cook the yolk completely using the steam. I like yolks completely cooked so this step takes me good amount of time. Make sure the heat is on low so the bottom of the eggs does not get burnt.
- Once the eggs are almost cooked, top them with onion tomato curry first and then spicy green garlic.
- Cover it and let it cook for a minute or two more. Serve it hot with any type of bread!
