Avocado Egg Spinach Salad
Boiled egg and avocado salad with healthy homemade garlicky avocado dressing!
An easy yet super tasty salad that can be used as either breakfast or lunch! I like the idea of eating egg salad on a toast for breakfast. This egg salad includes good fat, fiber and garlicky dressing! That is right, this dish is a great combination of protein, good fat and fiber with great flavor.
I like a combination of boiled eggs and avocado but definitely not if it is bland. To overcome that blandness, I like to add some garlicky/spicy dressing to it which is made out nothing but avocados. yes, more avocado to avocado salad lol. I know that did not sound so great, but trust me it tastes amazing!
This is definitely one of my favorite breakfast salad. Hope you like it as much as I do!

Avocado Egg Salad
Ingredients
Salad Ingredients
- 3 Whole Boiled Eggs
- 1½ Ripe Avocados
- ½ cup Chopped Sweet Yellow Onions finely chopped
- 1 cup Chopped Baby Spinach
Dressing Ingredients
- ½ Ripe Avocado
- 1 Serrano Pepper
- 1 clove Garlic 1 big clove or 2-3 small cloves
- ¼ bunch Cilantro or ½ cuo chopped cilantro
- ¼ cup Extra Virgin Olive Oil
- 1½ tsp Salt
- 1 tsp Ground Black Pepper
Garnishing
- 3 tbsp Hemp Seeds
Instructions
Make Dressing
- Put all dressing ingredients in a blender, add 3 tbsp of water and blend it to smooth paste. Keep it aside. Add more water if needed to blend it to smooth paste.
Salad
- Mix chopped boiled eggs, cubed avocados, chopped onions and chopped baby spinach along with the dressing.
Serving
- Toast slices of bread, bagel or croissant and top them with avocado egg salad. Sprinkle some hemp seeds on top and serve!
