Loaded Mediterranean Pizza
Super crispy Mediterranean Pizza loaded with veggies like caramelizing onions, fire roasted red peppers, marinated artichokes, mixed olives, spinach, mild herbs and feta cheese!
I absolutely love Trader Joe’s pizza crust! This light and fluffy pizza crust gets super crispy when baked at right temperature! It is my go to when it comes to quick weeknight pizzas. However I like incorporate as many veggies as possible in my meals. I like to make this mediterranean veggie mix loaded with caramelizing onions, fire roasted red peppers, marinated artichokes, mixed olives, spinach and mild herbs in my Lodge cast iron pan. I use that as Mediterranean Pizza topping, pizza sauce and decent amount of feta cheese to make Mediterranean Pizza. Bake it just right to make it nice and crispy and enjoy! Can you believe that all the ingredients I am using to make this pizza is from Trader Joe’s?!?!
This recipe is a great one for prepping ahead. I like to make the veggie topping on weekend and use that on busy weekdays to make quick and easy pizza which is full of nutrients and flavors! If you are vegan, you can skip the feta cheese or use “tofu feta” to add flavor and more protein!

Mediterranean Pizza
Ingredients
- 3 tbsp Oil
- 2 cup Sliced Onions
- 1 cup Chopped Baby Spinach
- ¾ cup Chopped Fire Roasted Red Peppers
- ¾ cup Chopped Marinated Artichoke Hearts
- ½ cup Chopped Picked Olives
- ½ tsp Salt
- 1 tbsp Balsamic Vinegar
- 1 tsp Garlic Powder
- ½ tsp Oregano
- ½ tsp Black Pepper Powder
- ½ tsp Crushed Red Pepper Flakes
- 2 Pizza Crust
- 1 cup Feta Cheese
- 1 cup Pizza Sauce
- 1 tsp Sugar Optional
Instructions
Caramelizing onions
- Heat oil in a cast iron pan or regular pan. Once hot, saute slices onions with ½ tsp of salt until translucent.
- Once translucent, turn the heat to low and add sugar (optional). Mix well and cook on low heat for 20 minutes or so until they are golden brown.
Make the topping
- Add all chopped baby spinach to caramelizing onions and cook until spinach is wilted.
- Add chopped marinated artichoke, chopped fire roasted peppers, chopped pickled olives, garlic powder, oregano, black pepper, balsamic vinegar and crushed red pepper flakes.
- Mix well and cook for couple of minutes on medium heat or until all the water is evaporated from the veggie mix.
Assembly
- Pre heat oven on 425°F.
- Bake TJ's pizza crust for 3-5 minutes on the bumpy side (the side sauce goes on).
- Take the pizza crust out of the oven, flip it, spread some pizza sauce on it, then spread the veggie mix on it. Sprinkle some feta cheese on it.
- Bake it on 425°F for 8-10 minutes or until the bottom is crispy.
- Serve it hot!
