Cilantro Lime Rice – Instant Pot

Cilantro lime rice flavored with fresh cumin, cilantro, lime juice, jalapeños, scallions and black beans made in an Instant Pot.

You give me rice in any form and I will eat it! I mean as long as it is vegetarian LOL. Rice is one my favorite comfort food. I like to play around with a lot. I am a huge fan of Chipotle cilantro lime rice. Therefor I wanted to try making it at home with tiny modifications. I made this rice in an Instant Pot to make it quick and easy! I also used black beans in this dish to add some protein and fiber.

Cilantro Lime Rice!

This cilantro lime rice is kids friendly! It is great as is, and also for burrito bowls, burritos, chimichangas, enchiladas, quesadillas etc. It is also a great option for meal prep. Make a big batch of it on weekend and enjoy it on busy weeknights. My kids love to take it in their lunch box as well. It is a multi purpose dish!

Cilantro Lime Rice

Cilantro lime rice flavored with fresh cumin, cilantro, lime juice, jalapeños, scallions and black beans.

Ingredients

  • 1 cup Uncooked White Rice medium grain is preferred
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 Bay Leaf
  • 1 tsp Chopped Jalapeno Pepper
  • ¼ cup Chopped Cilantro Stems
  • ½ cup Chopped Cilantro leaves
  • ¼ cup Chopped Scallions
  • 15 oz Canned Black Beans
  • 2 tbsp Lime Juice more or less based on your preference
  • 1 tsp Cumin Powder
  • tsp Salt

Instructions

  • Wash and Soak rice for 15-20 minutes.
  • Put Instant Pot on saute mode.
  • Heat 2-3 tbsp oil, add bay leaf, cumin seeds, chopped cilantro stems and chopped jalapeños.
  • Saute for couple of minutes. Add soaked and drained rice to IP.
  • Saute rice for couple of minutes.
  • Add 1½ cups of water and 1 tsp of salt.
  • Mix it and close the lid, cook on high pressure for 4 minutes. Release pressure naturally for 7-8 minutes. Release rest of the pressure manually.
  • Open the lid once the security valve is down. Fluff up the rice with fork very gently. Keep it aside.
  • Drain water out from the black beans and give it a rinse.
  • Mix black beans, chopped cilantro leaves, chopped scallions, cumin powder, ½ tsp salt, 2 tbsp of fresh lime juice in a big bowl.
  • Add cooked rice in the beans mix and mix it gently, making sure the rice does not break. Taste it and add more salt and/or lime juice if needed.
  • Serve it hot, warm or at room temperature with any Mexican food!
