Veggie Tofu Fried Rice
Brown fried rice loaded with flavored tofu and mixed veggies that are sautéed in ginger garlic paste and flavored with sweet and spicy asian sauces
The best use of leftover rice in my household is to use it for some sort of fried rice. Fried rice is so simple to make with just few ingredients. The core of the Chinese fried rice is mixed veggies that are sautéed in ginger garlic paste and flavored with sweet and/or spicy asian sauces! However you might think it is lacking some protein. Well yes, and therefor I like to add flavored tofu to my fried rice! The soft tofu cubes are sautéed till they get crispy from outside but still soft from inside. Moreover they are coated with sweet and spicy asian sauces.
This dish is kids friendly if you skip or cut down on sriracha sauce! My kids absolutely love it. This is perfect dish to make on those busy night when you don’t have enough time to cook but still want to eat healthy and flavorful meal! You can also prep ahead to make it even faster. Have leftover rice, chopped veggies and readymade ginger-garlic paste. You can fix this dish within minutes. This is a perfect addition to your Indo-Chinese feast that could include Veg Manchurian, chili tofu, chili mushroom, chili paneer, Chinese Bhel, Cauliflower Manchurian, Hot & Sour soup, Manchaow soup ect.

Veggie Tofu Fried Rice
Ingredients
- 3 cup Steamed brown or white rice leftover rice works the best for this recipe!
- 1 tbsp Ginger Garlic Paste
- ½ cup Chopped Yellow Onions
- ½ cup Chopped Cabbage
- ¼ cup Chopped Carrots
- 1 cup Frozen Mixed Veggies
- 1 cup Frozen Edamame Beans
- ¼ cup Chopped Cilantro
- ¼ cup Chopped Scallions
- 2 tbsp Dark Soy Sauce
- 1 tbsp Sriracha Sauce more for more heat
- 1½ tbsp Hoisin Sauce
- 1 tsp Salt
- 1 tsp Black Pepper Powder
- 3 tbsp Oil
Flavored Tofu
- 2 tbsp Oil
- 12 oz Soft Tofu
- 1 tbsp Dark Soy Sauce
- 1 tbsp Hoisin Sauce
- 1 tsp Sriracha Sauce more for more heat
Instructions
Saute Tofu
- Take tofu out of the box and wrap it in couple of paper towels for anywhere from 30-40 minutes. Place a Weight on the wrapped tofu. Your weight should be heavy enough to press down evenly across the top of the tofu, but not so heavy so as to cause the tofu block to crumble.
- Once the extra water if gone from the tofu, cut them in cube and saute them in 2 tbsp of oil on medium heat until they get golden brown and somewhat crispy, tossing and turning them every few minutes. Be careful while tossing and turning so it does not crumble.
- Once tofu cubes are golden brown on each side, add dark soy sauce, hoisin sauce and sriracha sauce.
- Mix it very well to coat each cube evenly without crumbling them. Take them off the heat and keep them aside.
Make Fried Rice
- Heat 3 tbsp of oil in a wide pan.
- Once hot, add 2 tbsp of ginger garlic paste and saute for 2-3 minutes, or until the raw smell of garlic disappears.
- Add chopped onions and saute on high heat for couple of minutes.
- Add chopped cabbage and saute on high heat for couple of minutes.
- Add chopped carrots and saute on high heat for couple of minutes.
- Add dark soy sauce, hoisin sauce, sriracha saute, salt and pepper. Mix it very well.
- Add boiled mixed veggies and boiled edamame beans. Mix well.
- Add chopped cilantro and chopped scallions. Mix it well
- Add cooked rice and mix it well. Taste for seasoning and sauces, add more if needed.
- Add prepared tofu to fried rice and mix well.
