Spiced up Jackfruit
- 2 tbsp Oil
- ½ medium Sliced Onions
- ½ medium Sliced Red Pepper
- 1 small Finely Chopped Serrano
- 20 oz Jackfruit in Brine (canned) drained, rinsed and shredded using fork
- 1 tsp Minced Garlic
- 2 tbsp Buffalo Sauce
- 1 tsp Hot Sauce
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp Taco Seasoning
Assembly & Toppings (as per your choice)
- 1 cup SUPER GREEN GUACAMOLE
- 1 cup PICKLED COLESLAW
- ⅓ cup Cojita Cheese
- ¼ cup Chopped Cilantro
- ¼ cup Chopped Scallions
- 1 cup Medium Spiced Salsa
- 6-8 Mini Taco Tortillas flour or corn tortilla, based on your preference
Jalapeño Ranch (Use store bought or blend below ingredients to desired consistency)
- ½ cup Cilantro
- 1 Jalapeño use ½ for less heat
- ½ cup Fat Free Plain Greek Yogurt
- ¼ cup Sour Cream
- 1 clove Garlic
- ½ tsp Garlic Powder
- ½ tsp Onion Powder
- ¼ tsp Cumin Powder
- 1 tsp Lemon Juice
- ½ tsp Salt
Spiced up Jackfruit
Drain, rinse and shred jackfruit using fork once you take them out of the can. Keep it aside.
Heat oil, saute chopped serrano and minced garlic for couple of minutes until the raw smell of garlic disappears.
Saute sliced onions and peppers until onions are translucent.
Add prepared jackfruit. Cook it on medium heat until most of the moisture evaporates and it starts to brown. It should take anywhere from 7-10 minutes.
Add buffalo sauce, hot sauce, garlic powder, onion powder and taco seasoning. Mix well.
Cook for a minute or two. Turn the heat off. Keep it aside.
Assemble
Warm tortilla on the flame to get that char look and flavor.
Spread generous amount of SUPER GREEN GUACAMOLE. Top it with generous amount of spiced up jackfruit mix.
Sprinkle cojita cheese, cilantro and scallions.
Sprinkle dash of hot sauce, salsa and Jalapeño ranch. Serve them immediately!!
