Fruit Custard
Fruit Custard – sweet milk based Indian dessert that is flavored & thickened using custard powder with hint of cardamom & saffron along with fresh fruits & nuts!!
Fruit Custard, also known as fruit salad in many Gujarati household including mine is a delicately flavored milk based dessert. It is super simple to make and a definite crown pleaser! Simply boil the milk with custard powder along with cardamom & saffron. Let it cool down and garnish with fresh fruits and dry fruits. That is simply it, it comes together quickly and great option when you need a big batch of dessert.
I am not a big fan of sweet dishes compared to how much I love my spicy and savory dishes. However this is one of those rare ones I could have all day any day!! I think it is because of its delicate flavors and not extremely rich consistency. Different people have different preferences when it comes to the thickness of this dessert. I grew up having a thin consistency over the thick one. While many regions/restaurants make it thick consistency, almost like pudding. It is only a matter of how much custard powder you use to achieve your desired consistency.

Fruit Custard
Ingredients
- ½ gallon Whole Milk (+ 1/4 cup for custard mix) 1.89 litter + 1/4 cup for custard mix
- 3 tbsp Custard Powder 2 tbsp for a little thin consistancy
- 10 threads Saffron
- 1 tsp Cardamom Powder
- ¾ cup Sugar
- Peeled & Finely Chopped Fresh Fruits 1 apple, 1 large banana, ½ cup chiku (if available), 2 kiwi, 2 cups grapes, 1 pomegranate etc
- ½ cup Slivered Nuts Pistachios, almonds, cashews
Instructions
- Bring milk to boil in a heavy bottom pot with saffron. Keep stirring it frequently to avoid burning of milk at the bottom of the pot.
- Mix 3 tbsp (use 2 tbsp for a little thin consistency) of custard powder with ¼ cup of milk to make a smooth paste.
- Once milk comes to boil, bring the heat down, slowly pour the smooth custard mix (stir it well before adding) in the milk while mixing constantly.
- Add sugar and cardamom powder. Mix well, let it boil for 10-12 minutes while stirring frequently.
- Turn the heat off and let it cool down completely. You will see a layer of malai (milk fats) on top, you can either mix it well in the milk or discard. I like to mix it in the milk for great texture! Milk will keep on thickening as it cools down.
- Once cooled down, add peeled/chopped fresh fruits and slivered nuts. Mix well.
- Refrigerate for few hours before serving. It will keep on thickening as it cools down. Serve it cold with side of puri and bataka wada!!
