Saute corn kernel and finely chopped jalapeno with 1 tbsp of avocado oil or butter. Once charred, keep it aside to bring it to room temperature.
Boiled pasta as package instructions. Keep them al dente. Once done, keep them aside to bring it to room temperature.
Blend everything listed under "dressing/crema" until smooth. Keep it aside.
Place red onions, green pepper, red pepper, scallions, cilantro, charred corn kernel with jalapeno, boiled pasta in a one big mixing bowl.
Pour in dressing/crema and toss everything well so that the dressing is evenly distributed.
Toss in feta cheese and tajin. Serve it with choice of beverage! I love topping it with crumbled spicy protein chips like Quest chili lime/hot and spicy/spicy sweet chili flavors to add extra crunch with added protein!
