High protein and high fiber Street Corn Pasta Salad packed with crunchy veggies, al dente pasta and creamy dreamy high protein crema.
Warm weather calls for a big bowl of pasta salad with an ice cold lemonade. And if the pasta salad is prepared ahead of time as part of your meal prep. Of course it a huge bonus! This Street Corn Pasta Salad is just that. It is great for making a big batch ahead of time. So that you can sit back and relax on those busy days after work and enjoy this goodie outdoors.

I love me a big salad loaded with crunchy veggies and creamy dressing. Being a vegetarian such salads can trick you if you are not mindful of some minor swaps that makes a big difference. For example switching regular pasta with high protein high fiber pasta. Switching mayo and sour cream with cottage cheese and greek yogurt. Swapping full fat cheese with low fat cheese. Just few of such swaps can make a huge difference in the macro nutrients of your pasta salad without compromising on the flavors and texture.

This Street Corn Pasta Salad is packed with amazing flavors, crunchy veggies and creamy dreamy dressing made with mix of greek yogurt and cottage cheese. Being a woman of age 40+, I am in my high protein high fiber era. But I refuse to suffer through my food options, so such healthy recipes always a big win for me. I do not like to compromise on the flavors and texture of my food and this is a great example of how to achieve great outcome with the few smart swaps like I mentioned above.

I have been obsessed with chipotle flavored recipes. Corn salad does not usually have chipotle flavors, but trust me with this one and just take my word for it. I guarantee you are to make this on repeat this summer. Street Corn Pasta Salad
Ingredients
Roasted Corn Kernel (can simply use store bought pre roasted corn kernel)
- 1 tbsp Avocado Oil
- 4 cup Roasted Corn Kernel
- 1 Finely Chopped Jalapeno
- ½ tsp Salt
Other Ingredients
- 8 oz Ditalini Pasta, or any shaped pasta using high protein pasta adds touch of more protein
- ½ large Red Onion, small cubes
- 1 med Chopped Green Pepper, small cubes
- 1 med Chopped Red Pepper, small cubes
- 1 cup Finely Chopped Scallions lightly packed 1 cup
- 1 cup Finely Chopped Cilantro lightly packed 1 cup
- ¾ cup Feta Cheese
- 1½ tsp Tajin optional
Dressing/Crema
- â…” cup Fat Free Plain Greek Yogurt 1 full serving (e.g fage or kirkland brand)
- ½ cup 2% or 4% Good Culture Cottage Cheese
- 2 tbsp Chipotle Pepper with Adobo Sauce heaping tbsp
- 2 large Garlic Cloves
- ½ large Lemon
- 1¼ tsp Salt
- ¼ tsp Black Pepper Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Dry Oregano
- ½ tsp Smoked Paprika
- 1½ tbsp Honey
Instructions
- Saute corn kernel and finely chopped jalapeno with 1 tbsp of avocado oil or butter. Once charred, keep it aside to bring it to room temperature.
- Boiled pasta as package instructions. Keep them al dente. Once done, keep them aside to bring it to room temperature.
- Blend everything listed under "dressing/crema" until smooth. Keep it aside.
- Place red onions, green pepper, red pepper, scallions, cilantro, charred corn kernel with jalapeno, boiled pasta in a one big mixing bowl.
- Pour in dressing/crema and toss everything well so that the dressing is evenly distributed.
- Toss in feta cheese and tajin. Serve it with choice of beverage! I love topping it with crumbled spicy protein chips like Quest chili lime/hot and spicy/spicy sweet chili flavors to add extra crunch with added protein!
