Egg Salad Sandwich
Egg Salad Sandwich simply made with spiced up boiled eggs along with healthy spread and topping!

Egg Mixture
- 6 Hard Boiled Eggs OR 15.5 oz canned chickpeas (washed/drained)
- 1 tsp Trader Joes Bomba sauce OR Red Thecha Chutney
- ½ tsp Salt
- ½ tsp Pepper
- ¼ tsp Red Chili Powder
- 2 tbsp Cream Cheese
Other Ingrediets
- 4 English Muffins or choice of bread
- 1 tbsp Spread Butter Optional
- 1 Avocado
- 1 Tomato sliced
- 1 handful Fresh Baby Spinach
- 2 tsp Everything Seasoning
Mash boiled eggs (boiled chickpeas if swapping with eggs). Add in salt, pepper, red chili powder, cream cheese & bomba sauce (or red thecha chutney). Mix it well to creamy mixture.
Toast english muffin and butter it.
Spread mashed avocado on one side of the english muffin.
Top it with egg/chickpea mixture.
Top it with sliced tomato, everything seasoning and baby spinach. Top it with other side of the english muffin to make a sandwich.
Enjoy it with choice of beverage!!
