Warm up 1 cup of whole milk along with sugar and white sesame seeds. Keep it aside.
Mix all purpose flour and wheat flour in a wide bowl.
Add melted ghee to the flour and mix well.
Start adding little sweetened milk (warm enough to handle with your bare hands) to form bhakhri like dough. Keep adding little sweetened milk at a time and kneading until you have not too soft and not too hard dough formed. If you run out of milk, use warm water to kneed the dough.
Once the dough is formed, cover it and keep it aside for 15-20 minutes.
For rolling, you can either roll small puris or roll big rotis and cut them in small circles using a cookie cutter to make them cute tiny little crackers.
Poke them couple of times with a fork. Lay the rolled out suvari on flat surface to let it dry. Do not stack them.
Once all the suvaris are rolled out, let them dry out for 40-45 minutes.
Deep fry them slowly on medium heat on both sides until they are golden brown. It might seem like it does not crisp up right after deep frying, but let them cool down and it should get crispy
Serve them with your spicy and savory Diwali snacks!! Store them in an air tight container upto 2-3 weeks.
