Vegan Meatballs
Vegan meatballs made out of onions, mushrooms, oats, beans and flax-meal along with light spices

Sautéed Onion Mushroom
- ½ cup Finely Chopped Yellow Onions
- 18 oz Baby Bella Mushrooms Stems removed, chopped very finely
- 2 tbsp Olive Oil
- ½ tsp Salt
- 1 tbsp Minced Garlic
Vegan Meatballs Ingredients
- ½ cup Rolled Oats Flour
- ½ cup Boiled Red Kidney Beans
- 2 tbsp Flaxseed Meal
- 2 tbsp Tomato Paste
- ½ tsp Salt
- ¼ tsp Black Pepper Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dry Basil
Sauce
- 2 tbsp Olive Oil
- 3 cloves Sliced Garlic
- 1 tsp Crushed Red Peppers
- ¼ tsp Black Pepper Powder
- ¼ tsp Salt
- 2 cup Marinara Sauce
- 1 cup Cherry Tomatoes
- ¼ cup Chopped Fresh Basil
Prepare Mushrooms
Heat up 2 tbsp olive oil. Saute minced garlic and finely chopped onions with ½ tsp of salt.
Once onions are completely translucent, add finely chopped mushrooms.
Keep sautéing until all the moisture from mushrooms evaporates.
Once mushrooms are cooked, take it off the heat and let it cool down.
Prepare Vegan Meatballs
Process rolled oats in a food processor to make a coarse oats flour. Take it out in a wide bowl.
Process boiled red kidney beans in a food processor to make coarse/grainy paste. Take it out in the same bowl as the oats flour.
Add everything else listed under "Vegan Meatballs Ingredients" along with prepared onions and mushroom mix.
Mix it well to form vegan meatball dough.
Make 15 ish even sized balls from the dough. Spray some oil on the balls.
Pre-heat air fryer on 375° F and air fry them for 12 minutes. Moving balls around couple of times in between.
If you are baking the vegan meatballs, preheat oven on 375° F and bake the balls for 20-25 minutes, moving the balls couple of time in between.
Prepare the sauce while vegan meatballs are cooking.
Prepare Sauce
Heat 2 tbsp of olive oil in a pan.
Saute sliced garlic and crushed red pepper on medium heat until the garlic slices get golden brown.
Add whole cherry tomatoes to the pan and char them on medium/high heat until they start loosing some moisture.
Add marinara sauce, salt, pepper and mix well. Bring it to boil.
Add prepared/cooked vegan meatballs to the sauce.
Garnish it with freshly chopped basil.
Serve these vegan saucy meatballs with spaghetti, over sub or plain white rice!
